Air Fryer Chicken Tenderloins

  • 8 chicken tenderloins
  • ½ cup dry bread crumbs
  • 1 egg, beaten
  • 2 Tbsp. vegetable oil
  • Salt and pepper to taste

Preheat air fryer to 350 degrees F. Place the beaten egg in a small bowl. In another bowl mix the bread crumbs, salt and pepper and oil until the mixture becomes loose and crumbly. Dip each chicken tenderloin into the beaten egg and shake off any excess. Then dip the chicken into the bread crumb mixture. Be sure the chicken tenderloin is evenly coated all over. Place the chicken tenderloins in the basket of the air fryer and cook until the chicken is no longer pink in the center, about 12 minutes. The internal temperature of the chicken when an instant thermometer is inserted into the center of the tenderloin should read at least 165 degrees F.

Air Fryer Lemon Pepper Shrimp

  • 12 ounces uncooked medium shrimp, peeled and deveined
  • 1 sliced lemon
  • 1 lemon, juiced
  • 1 Tbsp. olive oil
  • ¼ teas. paprika
  • 1 teas. lemon pepper
  • ¼ teas. garlic powder

Preheat air fryer to 400 degrees F. In a mixing bowl combine the olive oil, lemon juice, lemon pepper, garlic powder and paprika and mix. Add the shrimp to this mixture and toss the shrimp to coat well. Place the shrimp in the fryer basket and cook until the shrimp is firm and pink, about 6-8 minutes. Serve the shrimp with the sliced lemon.

Air Fryer Mozzarella Sticks

For the coating:

  • 5 ounces mozzarella cheese cut into strips
  • 1 cup panko bread crumbs
  • ½ teas. salt
  • ½ teas. pepper
  • ½ teas. parsley flakes
  • ½ teas. garlic powder
  • ¼ teas. onion powder
  • ¼ teas. dried oregano
  • 1 Tbsp. flour

For the batter:

  • ½ cup water
  • ¼ cup flour
  • 5 Tbsp. cornstarch
  • 1 Tbsp. cornmeal
  • 1 teas. garlic powder
  • ½ teas salt

Place the water, cornstarch, flour, cornmeal, garlic powder and salt in a wide bowl and mix intoa batter. After mixing, the batter should resemble pancake batter. You may have to adjust some of the ingredients to get the consistency you want. In another bowl stir together the bread crumbs, salt, pepper, parsley, garlic powder, onion powder, and oregano. Coat each mozzarella stick lightly with flour. Then dip each stick in the batter, shake off any excess batter.

Next dip the mozzarella stick into the bread crumb mixture and toss to coat. Place the mozzarella sticks on a baking sheet and place in the freezer for at least 1 hour. Preheat the air fryer to 400 degrees F. Place the mozzarella sticks in in single layer in the air fryer basket. Spray the sticks lightly with cooking spray. Cook mozzarella sticks for about 6 minutes. Open fryer drawer and turn the mozzarella sticks over using tongs. Continue cooking until the sticks are golden brown, about 7 minutes.
