Bacon Wrapped Chicken Bites, Bang Bang Chicken, Chicken Gordon Bleu

Bacon Wrapped Chicken Bites

  • 3 boneless skinless chicken breasts (about 1 ¼ lb. total)
  • 10 slices of bacon

Cut the chicken breasts into 1-inch chunks. You want to have 30 chicken chunks. Cut the bacon strips into thirds. Preheat the oven to 425 degrees F. Spray a rimmed baking sheet with cooking spray. Wrap one piece of bacon around each piece of chicken and secure the bacon with a toothpick. Place the wrapped chicken chunks on the prepared baking sheet and bake in the preheated oven for about 15 minutes. You want the chicken to be cooked through and the bacon to be brown and crisp. Turn the chicken chunks over halfway through cooking. Remove cooked bacon wrapped chicken bites from oven and blot on paper towels.

Bang Bang Chicken

  • 1 lb. boneless skinless chicken breasts
  • 2 teas. olive oil
  • 6 Tbsp. whole wheat Italian seasoned breadcrumbs
  • 2 Tbsp. plain panko crumbs
  • salt and pepper to taste

Bang Bang Sauce:

  • 2 Tbsp. chopped scallions
  • 2 ½ Tbsp. light mayonnaise
  • 1 ½ Tbsp. Thai Sweet Chili Sauce
  • 1 Teas. Sriracha, or to taste

Cut the chicken breasts into 1-inch chunks. You want to have about 24 chicken chunks. Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray. Mix the Italian breadcrumbs and the panko crumbs together in one bowl. Put the olive oil in another bowl. Season the chicken chunks with salt and pepper to taste. Dip the chicken chunks first into the olive oil and then into the breadcrumb and panko mixture. Place coated chicken chunks on prepared baking sheet. Spray the top of the chicken chunks with cooking spray. Place baking sheet with chicken in preheated oven and bake for 8-10 minutes. Turn chicken over and bake for an additional 4-5 minutes until chicken is cooked through. While chicken is cooking combine all the ingredients for the bang bang sauce in a medium bowl. When chicken is cooked drizzle the bang bang sauce over the chicken and toss gently to coat.
Note: Bang bang chicken is great served over mixed salad greens.

Chicken Gordon Bleu

  • 12 thin sliced boneless skinless chicken breast. Each breast approximately 3 oz.
  • 6 slices reduced fat Swiss cheese
  • 6 slices thinly sliced lean deli ham
  • ¼ cup grated parmesan cheese
  • 1 egg
  • 2 egg white or equivalent egg substitute
  • 1 teas. water, may use more if needed
  • ½ cup seasoned breadcrumbs
  • salt and pepper to taste

Preheat oven to 450 degrees F. Spray a baking sheet with cooking spray. Lightly pound the chicken cutlets to make them even a little thinner and season the chicken with salt and pepper. Cut the ham slices in half. Cut the cheese slices in half. Place the chicken on a work surface and place one slice of cheese and one slice of ham on top of each piece of chicken. Roll the chicken breasts and set them aside with the seam side down. Whisk together the eggs and egg whites and water in a medium bowl. Combine the parmesan cheese and breadcrumbs in another bowl or on a piece of foil. Dip the rolled chicken first into the egg wash and then into the breadcrumbs. Place the coated chicken on the prepared baking sheet and spray the chicken with cooking spray. Place baking sheet in preheated oven and bake the chicken for about 25 minutes or until it is cooked through.
