Baked Shrimp in Tomato Sauce, Mexican Style Baked Cod, Salmon with Lemon and Garlic

Baked Shrimp in Tomato Sauce

  • 1 lb. medium raw shrimp, peeled and deveined
  • 1 medium onion, chopped
  • 2 14.5 oz. cans diced tomatoes
  • 2/3 cup (3 oz.) crumbled feta cheese
  • 2 cloves garlic, minced
  • ¼ cup minced fresh parsley
  • 1 teas. dried dill
  • 1 Tbsp. olive oil
  • salt and pepper to taste

If using frozen shrimp thaw them first. Preheat oven to 425 degrees F. Heat the oil in a large oven-proof skillet over medium high heat. When the oil is hot add the onions and cook about 3-5 minutes, or until softened. Add the garlic and cook about 30 seconds until fragrant. Add the tomatoes to the onion and garlic, reduce heat and simmer these ingredients for 5-10 minutes until the juices thicken some. Remove the skillet from the stove and stir in the parsley, dill, shrimp, feta cheese and salt and pepper. Place skillet in the oven and bake for about 10-12 minutes until the shrimp is cooked through.

Mexican Style Baked Cod

  • 1 lb. cod (4 fillets)
  • ½ cup salsa
  • ½ cup reduced fat shredded sharp cheddar cheese
  • 1 avocado, pitted, peeled and sliced
  • ¼ cup fat free sour cream
  • salt and pepper to taste

Preheat oven to 400 degrees F. Spray an 8-12 baking dish with cooking spray. Rinse the fish fillets under cold water and pat dry with paper towels. Lay the fillets in the prepared baking dish and season lightly with salt and pepper. Pour the salsa over the fish and the sprinkle the top of fish with the cheddar cheese. Place the baking dish in the preheated oven and bake, uncovered, for 15 minutes or until fish is opaque and flakes easily with a fork. Serve the fish topped with sliced avocado and sour cream.

Salmon with Lemon and Garlic

  • 8 oz salmon (2 4 oz. fillets)
  • 2 teas. garlic, minced
  • 1 teas. lemon pepper
  • 2 Tbsp. unsalted butter
  • 1 lemon
  • Fresh parsley, optional

Cut the lemon in half and juice one half of the lemon and slice the other half. Sprinkle lemon pepper on both sides of the salmon fillets. Melt the butter in a large skillet over medium high heat. Be careful not to burn the butter. Add the garlic to the melted butter and stir. Place the salmon in the garlic butter and cook for 5 minutes. Flip the fish over and continue to cook for an additional 5 minutes or until the fish has browned and flakes easily with a fork. Sprinkle fish with lemon juice before serving. Serve the fish with a lemon slice and sprig of parsley.
