Teriyaki Shrimp Burgers with Pineapple

Baked Tilapia with Garlic and Lemon 

6 6 oz. tilapia fillets 

4 cloves garlic, crushed 

2 Tbsp. lemon juice 

2 Tbsp. butter or margarine 

4 teas. fresh parsley, chopped 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray the bottom of a baking dish with cooking spray.  Place a small skillet over low heat and add the butter or margarine to the skillet.  When the butter or margarine has melted add the garlic and sauté for about 1 minute.  Add the lemon juice to the pan and turn off the heat.  Place the fish fillets in the prepared baking dish and season with salt and pepper.  Pour the lemon butter mixture over the fish and top the fish with the fresh parsley.  Place the baking dish in the preheated oven and bake the fish for about 15 minutes until the fish is done and flakes easily with a fork.

Teriyaki Shrimp Burgers with Pineapple 

Shrimp Burgers 

2 lbs. peeled and deveined shrimp 

¼ cup panko crumbs 

2 cloves garlic, minced 

½ cup scallions, finely chopped 

1 teas. grated fresh ginger 

1 teas. reduced sodium soy sauce 

1 teas. siracha sauce, or to taste 

8 slices fresh pineapple, cored 

8 100 calorie each whole wheat rolls 

8 lettuce leaves 

Dry the shrimp with a paper towel and then place the shrimp in a food processer together with the garlic.  Pulse the shrimp and garlic a few times until the mixture is almost pasty.  Place the shrimp in a large bowl and add the scallions, ginger, soy sauce, panko crumbs and sriracha sauce and mix well.  Shape the shrimp mixture into 8 patties.  Refrigerate the patties for at least 1 hour or overnight.  Heat the grill over medium-high heat and brush the grates with oil.  Add the shrimp burgers to the heated grill and cook for about 6 minutes on each side.  While the shrimp burgers are cooking, grill the pineapple slices for about 2-3 minutes on each side.  To serve the shrimp burgers place one lettuce leaf on the bottom half of the whole wheat roll and top the lettuce with a shrimp burger.  Add 1 ½ teaspoons of the teriyaki sauce to top the shrimp  burger and then add the grilled pineapple and finish with the other half of the roll.
