Banana Cake, Raisin Cake & Cinnamon Cake 

Banana Cake 

2 large ripe bananas½ cup butter or margarine 

1 teas. vanilla1 ½ cups sugar 

2 eggs2 cups sifted flour 

½ teas. baking powder¾ teas. baking soda 

¼ teas. salt½ cup milk 

½ cup chopped walnuts 

Preheat oven to 350 degrees F.  Spray a 10-inch tube pan or 2 8-inch layer pans with cooking spray.  Cut bananas into smaller pieces.  In large mixing bowl combine all the ingredients except the walnuts.  Mix these ingredients well and then stir in the walnuts.  Pour the cake batter into the prepared pan.  Bake in preheated oven approximately 1 hour for the tube pan or 40 minutes for the layer pans.  Cool cake on rack for 10 minutes before removing from pan.  Allow cake to finish cooling on the rack.  Dust cake with powdered sugar or frost with banana butter frosting. 

Banana Butter Cream Frosting 

½ cup mashed banana½ teas. lemon juice 

¼ cup softened butter3 ½ cups 10X sugar, sifted 

Beat banana and lemon juice with mixer on low setting until well mixed.  Beat butter into the banana mixture until creamy and then slowly add the 10 X sugar and beat the mixture until it is light and fluffy. 

Raisin Cake 

3 ½ cups flour2/3 cup butter or margarine 

2 cups sugar4 eggs 

2 tsp. vanilla1 1/3 cups milk 

4 tsp. baking powder1 cup dark raisins 

1 cup golden raisins½ cup chopped walnuts, optional 

Preheat oven to 350 degrees F.  Grease and flour a tube pan or a Bundt pan. Place raisins in bowl and dust with ½ cup of the flour so raisins are coated.  (If they are not dusted with flour the raisins will sink to the bottom) Cream the butter or margarine and the sugar.  Beat in the eggs.  Add the milk and stir well.  Mix in the 3 cups of flour, the baking powder and the vanilla.  Stir in the raisins and the flour the raisins are mixed in.  Stir in the walnuts, if desired.  Pour raisin cake batter into prepared cake pan and bake in preheated oven for about 1 hour.  Cake is done when toothpick inserted in the center comes out clean. 

Cinnamon Cake 

3 cups sugar1 lb. butter 

3 eggs2 cups flour 

1 cup milk2 tsp. vanilla 

2 tsp. baking powder 

For cake topping 

2 Tbsp cinnamon4 Tbsp butter or margarine 

1 ½ Tbsp sugar 

Preheat oven to 350 degrees F.  Spray a 9 x 13-inch baking pan with cooking spray.  In mixing bowl beat the butter, sugar and eggs.  Add the flour, milk and vanilla and mix well.  Stir in the baking powder.  Pour cake batter into prepared pan and bake in preheated oven about 30 minutes or until toothpick inserted in center comes out clean.  In a small bowl mix together the cinnamon and sugar. Just before cake should be done melt the 4 tablespoons of butter in a small saucepan over medium heat.  When the cake tests done remove it from the oven and brush the melted butter over the top of the cake.  Sprinkle the cinnamon sugar mix over the melted butter. Return cake to oven for about 3 more minutes.
