Banana Strawberry Ice Cream, Watermelon-Berry Smoothie, Mixed Fruit Popsicles, Tropical Fruit Salad, Fruit Jell-O

Banana Strawberry Ice Cream

  • 2 large bananas, peeled, sliced and frozen
  • 1 avocado, peeled, cored and sliced
  • 1 ½ cups strawberries, cleaned and cut in halves

Puree the bananas, avocado and strawberries in a food processer until liquid. Place in a bowl and freeze until the mixture is hard. Scrape the ice cream with a spoon into serving bowls. (You can vary this recipe by replacing the strawberries with another type of berry.)

Watermelon-Berry Smoothie

  • 1 cup plain fat-free yogurt
  • 1 cup watermelon, diced
  • 1 cup frozen berries

Place the frozen berries in a blender and pulse to break up the berries. Add the yogurt and then the watermelon and blend well. Pour into glasses and serve.

Mixed Fruit Popsicles

  • 4 popsicle molds
  • 4 popsicle sticks
  • 1 kiwifruit, peeled and sliced
  • 1 cup strawberries, cleaned and sliced
  • 1 peach, peeled and sliced
  • ½ cup blueberries
  • 1 16 oz. container coconut water

Divide the fruit between the 4 popsicle molds. Place a popsicle stick into each mold. Pour the coconut water into the mold. Leave ½ inch of space at the top of the mold to allow expansion. Freeze the popsicles for at least 4 hours.

Tropical Fruit Salad

  • 2 cups sliced bananas (about 2 large bananas)
  • 2 ½ cups mangoes diced into ¾-inch cubes (about 2 mangoes)
  • 5 cups papaya diced into ¾-inch cubes (about 1 papaya)
  • 4 cups fresh pineapple cut into ¾-inch cubes.(1 pineapple) – Reserve the juice from the pineapple
  • ¼ cup fresh grated coconut, optional

Do not peel and slice the banana until almost ready to serve. Combine the papaya, mangoes, pineapple and pineapple juice in a large bowl and toss to combine. Cover the bowl and refrigerate this mixture until it is chilled. Add in the sliced bananas and toss. Top the fruit salad with the grated coconut.

Fruit Jell-O

  • 1 large box Sugar-free Strawberry Banana Jell-O
  • 1 15 oz. can no sugar added fruit cocktail, drained
  • 1 apple, peeled and chopped
  • 1 tangerine, peeled, seeded and cut into chunks
  • 1 large banana, peeled and sliced
  • 2 cups boiling water
  • 1 ½ cups very cold water

In a bowl dissolve the Jell-O in the boiling water. Add the cold water and stir well. Place the Jell-O in the refrigerator and allow it to partially set. Add the fruit to the partially set Jell-O and return the bowl to the refrigerator. Chill the fruit Jell-O for at least 3 hours before serving.
