Basic Pancakes, Gluten-Free Pancakes, Corn Meal Pancakes, Oatmeal Pancakes

Basic Pancakes

  • 1 cup flour
  • 1 egg
  • 1 cup milk
  • 2 teas, sugar
  • 3 Tbsp. butter or margarine
  • 1 teas. baking powder
  • ½ teas. baking soda
  • ½ teas. salt

Melt the butter. Beat the egg. Combine the melted butter, beaten egg and milk, Add the flour, sugar, baking powder, baking soda and salt and mix until batter is smooth. Spray a griddle or frying pan with cooking spray and heat. The griddle is hot enough to cook the pancakes when a few drops of water sprinkled on the pan dance across it. Pour or spoon the batter onto the hot pan. When the pancakes start to bubble on the edges and they look fluffed turn the pancake over and brown the second side. Serve the pancakes hot. This batter makes 8-10 pancakes, Pancake variations: It’s easy to vary your pancakes. You can add berries or cut up fruit, nuts chocolate chips, cocoa, banana slices, or whatever you like to the pancake batter before cooking or you can drop the added ingredient into the pancake right after you put it on the griddle or in the pan.

Gluten-Free Pancakes

  • 1 cup almond meal
  • 2 Tbsp. canola oil
  • 2 eggs
  • ¼ cup water
  • 1 Tbsp. sugar
  • ¼ teas. salt

Mix together the almond meal, sugar, and salt. Stir in the eggs and the oil and water. Mix until well blended (If batter is too thick add a little more water) Spray a griddle or frying pan with cooking spray and heat. When the pan is hot, spoon the batter onto it and cook the pancakes until bubbles form on the edges. Turn the pancake over and continue to cook until it is golden brown. This batter makes about 6 pancakes.

Corn meal pancakes

  • 1 cup yellow corn meal
  • 1 cup sifted flour
  • 2 cups milk
  • 2 eggs
  • 1 Tbsp. baking powder
  • 1 Tbsp. sugar
  • 1 ½ teas. salt
  • 4 Tbsp. melted butter or margarine

In a mixing bowl combine the corn meal, sifted flour and baking powder. In another bowl combine the melted butter or margarine, the eggs and the milk. Stir the wet ingredients into the dry ingredients and beat until just blended. Spray a griddle or frying pan with cooking spray and heat. When a few drops of water dance across the pan it is hot enough to cook your pancakes. Spoon or pour the batter onto the prepared pan. When pancakes have browned on the first side flip them over and brown the second side. This batter makes about 12 pancakes.

Oatmeal Pancakes

  • 1 ¾ cups rolled oats
  • ¾ cups flour
  • 2 cups milk
  • 2 eggs
  • ¼ cup vegetable oil
  • 2 Tbs. sugar
  • 2 ½ teas. baking powder
  • 1 teas. salt

Pour the milk over the oats and let stand for about 3 minutes. Add the eggs and the oil and mix well. Add the flour, baking powder, sugar and salt and mix to combine all ingredients. Batter is going to be thin. Spray a griddle or frying pan with cooking spray and heat. When water dances across the pan it hot enough to cook the pancakes. Spoon or pour the batter into the prepared pan. Brown the pancake first on one side and then flip and brown on the other side. This batter makes about 20 pancakes.
