Blueberry and Banana Baked Oatmeal

1 ½ cups blueberries

2 medium ripe bananas, sliced

1 cup fat-free milk

1 egg

¼ cup honey

1 cup uncooked quick oats

¼ cup chopped walnuts, optional

½ teas. baking powder

¾ teas. ground cinnamon

pinch of salt

1 teas. vanilla extract

Preheat oven to 375 degrees F.  Spray an 8×8 or 9×9 baking dish with cooking spray.  Place the banana slices in a single layer in the bottom of the prepared baking dish.  Sprinkle half the blueberries over the bananas, ¼ teaspoon of the cinnamon and 1 teaspoon of the honey and cover the baking dish with foil.  Place the baking dish in the preheated oven and bake for about 15 minutes until the bananas are soft.  While this is baking combine the oats, half the nuts, baking powder, remaining cinnamon and salt in a bowl and stir.  In another bowl whisk together the remaining honey, milk, egg and vanilla extract.  Remove the baking dish from the oven and pour the oat mixture over the blueberries and bananas.  Pour the milk mixture over the oat mixture making sure the milk mixture is distributed evenly over the oats.  Sprinkle the remaining blueberries and nuts over the top.  Return the baking dish to the oven and bake for about 30 minutes until the top is golden brown and the oatmeal has set.

Apple and Cinnamon Baked Oatmeal

2 large tart, sweet apples, peeled, cored and diced

3 cups old fashioned rolled oats

2 eggs

½ cup unsweetened applesauce

½ cup lightly packed brown sugar

2 cup fat-free milk

1 ½ teas. baking powder

2 teas. ground cinnamon

¼ teas. ground nutmeg

½ teas. salt

1 teas. vanilla extract

Preheat oven to 325 degrees F.  Spray an 8×12 or 9×9 baking dish with cooking spray.  Whisk together the oats, baking powder, cinnamon, nutmeg, salt and brown sugar in a large bowl.

In another bowl whisk together the milk, eggs and vanilla.  Pour the liquid ingredients over the dry ingredients and add the applesauce and stir to combine.  Arrange the diced apples over the bottom of the prepared baking dish and pour the oatmeal mixture over the apples.  Bake in preheated oven for 35-45 minutes until the top is golden brown and the mixture has set.

Pumpkin and Banana Baked Oatmeal

1 cup uncooked quick oats

1 egg

1 cup fat-free milk

1 Tbsp. honey

3 Tbsp. brown sugar

¼ cup chopped walnuts or pecans, optional

½ teas. baking powder

¾ teas. ground cinnamon

¼ teas. ground nutmeg

1 ½ teas. pumpkin pie spice

pinch of salt

1 teas. vanilla extract

Preheat oven to 375 degrees F.  Spray an 8×8 or 9×9 baking dish with cooking spray.  Arrange the bananas in a single layer in the bottom of the prepared baking dish.  Sprinkle the honey and ¼ teaspoon of the cinnamon over the bananas and cover the baking dish with foil. Place baking dish in preheated oven and bake for 15 minutes until the bananas are soft.  While the bananas are baking combine the oats, half the nuts, baking powder, pumpkin pie spice, nutmeg, salt and remaining cinnamon in a large bowl and stir.  In another bowl whisk together the pumpkin, milk, egg, brown sugar, and vanilla extract.  Remove the baking dish from the oven and pour the oat mixture over the bananas.  Pour the pumpkin mixture over the oat mixture making sure to distribute the mixture evenly.  Sprinkle the remaining nuts over the top.  Return baking dish to oven and bake for 30-35 minutes until the top is golden brown and the oatmeal has set.
