Broccoli Recipes

The basic recipe for cooking broccoli is to place the broccoli in a covered saucepan with a small amount of salted boiling water and cook until the stalks are tender which is about 12 to 15 minutes.  Drain the broccoli and season as desired.  Seasonings often used are lemon, oregano, or nutmeg, butter and salt and pepper. 

Broccoli with lemon and garlic 

  • 1 lb broccoli florets
  • 4 teas lemon juice 
  • 2 Tbsp waterpinch salt 
  • 3 Tbsp butter or margarine
  • 1 teas pepper 

In a small bowl stir the water and 2 teaspoons of lemon juice together.  In a large skillet over medium heat place the broccoli florets. Pour the lemon and water mixture over the broccoli in the skillet, cover and steam until the broccoli is tender and bright green, about 10 to 15 minutes. 

While broccoli is cooking in a small saucepan over low heat melt the butter and stir in the garlic and salt.  Allow the garlic to gently fry until slightly brown, about 7 minutes.   

When broccoli has cooked drain the water and return the broccoli to the skilled.  Sprinkle with the 2 remaining teaspoons of lemon juice, add the garlic and butter mixture and sprinkle with the pepper.  Toss everything together to combine. 

Broccoli Salad 

  • 1 large bunch fresh broccoli, cleaned
  • 1 red onion, chopped 
  • 1 cup shredded cheddar cheese
  • ½ cup fried bacon, crumbled 
  • ¼ c sugar
  • 2 Tbsp cider vinegar 
  • ½ c mayonnaise
  • ¼ cup sour cream 

Cut the cleaned broccoli into 2-inch pieces.  In bowl combine the broccoli, chopped onion, shredded cheddar cheese, and crumbled fried bacon.  In another bowl combine the sugar, vinegar, mayonnaise and sour cream and stir until smooth.  Pour this mixture over the broccoli mixture.  Chill the salad for several hours before serving. 

Broccoli Chicken Casserole 

  • 5 boneless skinless chicken breasts
  • 2 packages frozen chopped broccoli 
  • 1 can cream of chicken soup
  • ½ cup mayonnaise 
  • ½ cup evaporated milk
  • 1 cup grated sharp cheddar cheese 
  • 1 teas lemon juice
  • ½ teas curry powder 
  • ½ cup bread crumbs 

Boil chicken in salted water until done, about 20 minutes.  Remove from stove and drain water.  While chicken is cooking, in another covered saucepan cook broccoli in boiling water for about 12 minutes.  Remove from heat and drain. 

Heat oven to 350 degrees.  Spray large casserole dish with cooking spray.  Place broccoli in casserole dish.  Place the chicken breasts on top of the broccoli.  Combine chicken soup, mayonnaise, evaporated milk grated cheese, lemon juice and curry powder.  Pour this mixture over the chicken and the broccoli.  Sprinkle the top of the casserole with bread crumbs.  Bake for 25-30 minutes.   

Steamed Broccoli 

  • 1 head broccoli cleaned
  • salt & pepper to taste 
  • 1 Tablespoon butter or margarine 

Cut cleaned broccoli into florets.  Place steamer basket in saucepan.  Add water to just below the steamer basket.  Bring water to boil then add broccoli florets to the steamer basket.  Cover the saucepan and steam the broccoli for approximately 5 minutes, until tender.  Remove broccoli from pan and place in bowl.  Toss the steamed broccoli with the butter, and salt and pepper. Serve.
