Brownies 

Brownies are a treat that most people enjoy. They can be made from scratch or they can be made from a mix.  Brownies are delicious either way. They can be plain and simple, or they can be more fancy.  Here are several recipes for brownies made from scratch. 

Brownies

  • 1 cup butter or margarine
  • 1 cup sugar 
  • 2 eggs1 tsp vanilla 
  • 2 oz unsweetened chocolate, melted
  • 1 cup flour 
  • 1 cup chopped walnuts, optional
  • 1 tsp salt 

Heat oven to 350 degrees F.  Spray 8 x 8” pan with cooking spray.  Cream butter and sugar.  Add eggs one at a time stirring well after each egg.  Add flour, vanilla, salt and melted chocolate and mix.  Stir I walnuts.  Pour batter into greased pan and bake for 20-30 minutes.  When brownies are cool, cut into squares. 

No bake brownies

  • 1 12 oz package semi=sweet chocolate chips
  • 1 5 ½ can evaporated milk 
  • 3 cups finely chopped graham crackers
  • ½ cup chopped pecans or walnuts 

Spray 8x8x2” pan with cooking spray.  In medium saucepan over medium heat, combine milk and chocolate chips.  Cook and stir until chocolate melts and mixture is smooth.  Remove from heat and with a mixer on medium speed mix in the graham cracker crumbs and nuts.  Spread batter in prepared pan.  Refrigerate until firm.  Cut into squares. 

Zucchini brownies 

  • 2 cups grated zucchini
  • 2 cups flour 
  • 1 teas salt
  • 2 eggs 
  • 1 ½ teas baking soda
  • 1/3 cup unsweetened cocoa powder 
  • 1 cup sugar
  • ½ cup vegetable oil 
  • 1 teas vanilla extract
  • ½ cup chopped walnuts 

Preheat oven to 350 degrees F.  Spray a 10 x 15” pan with cooking spray.  In large mixing bowl sift together the flour, salt, cocoa, baking soda and sugar.  In another bowl mix together the eggs, oil and vanilla.  Add the zucchini to the wet ingredients.  Stir the zucchini mixture into the dry ingredients.  Stir in the chopped walnuts.  Pour mixture into prepared baking pan and bake in preheated oven for 20 minutes.  Cool and then cut into squares. 

Brownies with peanut butter

 

  • 6 oz cream cheese, softened
  • ½ cup smooth peanut butter 
  • 2 ¼ cup sugar
  • 4 eggs 
  • 1 cup butter or margarine, melted
  • 2 teas vanilla extract
  • 1 ¼ cups flour
  • 1 cup semi-sweet chocolate chips 
  • ½ teas baking powder
  • ¼ teas salt 
  • 3/4 cup unsweetened cocoa powder
  • 2 Tbsp milk 

Preheat oven to 350 degrees F.  Spray 9×13” pan with cooking spray.  In medium bowl beat cream cheese, peanut butter, ¼ cup sugar, 1 egg and milk until smooth.  Set this bowl aside.  In another large bowl, mix together the melted butter, 2 cups sugar and vanilla.  Mix in the 3 remaining eggs, one at a time, mixing well after each egg.  Mix in the flour, cocoa, baking powder and salt.  Stir in the chocolate chips.  Pour chocolate batter into prepared pan and smooth.  Spread the peanut butter mixture over the chocolate mixture in pan.  Use a knife to swirl the peanut butter mixture through the chocolate mixture.  Bake in preheated oven for 35 to 40 minutes.  Cool brownies and then cut into squares.
