Brussels Sprouts with Pancetta, Sesame Orange Broccoli, Orzo and Broccoli

Brussels Sprouts with Pancetta

  • 2 lb. brussels sprouts (weight after outer leaves and stems are removed)
  • 2 oz. pancetta, minced
  • 4 cloves garlic, minced
  • 1 1/2 Tbsp. olive oil
  • salt and pepper to taste

Thoroughly wash the brussels sprouts and then shred the sprouts using a large sharp knife. Place a large skillet over medium-low heat and sauté the pancetta until the fat melts and the pancetta becomes golden, about 5 minutes. Add the olive oil and garlic and sauté until golden. Increase the heat to high, add the shredded brussels sprouts, salt and pepper and sauté for about 6-10 minutes until tender crisp.

Sesame Orange Broccoli

  • ¾ lb. broccoli, cut into florets
  • ¼ cup orange juice
  • ¼ teas. orange zest
  • 1 scallion, chopped
  • 2 Tbsp. reduced sodium soy sauce
  • ½ Tbsp. corn starch
  • ½ teas. grated ginger
  • 1 clove garlic, minced
  • ½ teas. sesame oil
  • ½ teas. sesame seeds
  • salt and pepper to taste
  • Red pepper flakes to taste, optional

Bring a large pot of salted water to a rolling boil. Place the broccoli florets in the boiling water and boil for 1 minute. Drain the broccoli and place it in a bowl of ice water to stop further cooking. Place the orange juice, orange zest, soy sauce and cornstarch in a small bowl and whisk until the cornstarch is dissolved. Heat a large skillet or wok over high heat. Add the sesame oil, garlic and ginger to the skillet or wok and sauté for 30 seconds. Add the sauce and broccoli and sauté for 1-2 minutes until the broccoli is crisp tender. Place in serving bowl and sprinkle with sesame seeds and red pepper flakes, if using.

Orzo and Broccoli

  • 4.5 oz. uncooked orzo pasta
  • 2 cups fresh broccoli florets
  • 4 cloves garlic, minced
  • 3 teas. olive oil
  • Salt and pepper to taste

Wash the broccoli and remove any stems. You want to use only the broccoli florets. Cut the broccoli florets into small pieces and sprinkle with some salt. Steam the broccoli covered with a little water until cooked to crisp tender. When broccoli is cooked remove it from the pan and chop it into even smaller pieces. Cook the pasta according to package directions for al dente. Reserve about ½ cup of the pasta water before draining pasta. Add the oil to a large skillet and sauté the garlic for a few minutes until it is golden. Add the broccoli to the garlic and season with salt and pepper and mix well. Add the orzo and stir to combine all the ingredients. If pasta seems too dry add some of the reserved pasta water.
Grated cheese may be sprinkled over dish when serving, if desired. Grated cheese is not included in points calculation.
