Cauliflower Fritters, Zucchini and Feta Fritters, Banana Fritters

Cauliflower Fritters

  • 5 cups roughly chopped raw cauliflower
  • 2 large eggs, beaten
  • 1 cup flour
  • 3 cloves garlic, crushed
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh parsley, chopped fine
  • 1/3 cup hot water
  • 4 teas. olive oil
  • salt and pepper to taste

Steam the cauliflower over medium heat until tender, 5-6 minutes. Drain and rinse under cold water to stop the cooking. Chop the cooked cauliflower into small pieces. Combine the steamed cauliflower pieces, flour, garlic, eggs, grated cheese, parsley and salt and pepper to taste in a large bowl. Add enough of the hot water to the mixture so the batter becomes slightly more dense than regular pancake batter. Heat a large nonstick skillet over medium-low heat. Add 1 teaspoon of the oil to the skillet to coat the bottom of the pan. Use a ¼ cup measuring cup to form the fritters. Place the fritters in the skillet leaving some space between them.

Flatten the fritters slightly with the back of the measuring cup. Cook the fritters about 2 ½-3 minutes on each side until the fritters are golden brown. Repeat the cooking process with the remaining oil and batter until all the fritters have been cooked.

Zucchini and Feta Fritters

  • 3 medium zucchini
  • 2 large eggs, beaten
  • ½ cup crumbled feta cheese
  • ¼ cup diced onion
  • ¼ cup chopped fresh mint leaves
  • ½ teas. ground cumin
  • 1 cup flour
  • 4 teas. olive oil
  • ½ teas. salt
  • pepper to taste

Wash and dry the zucchini. Shred the zucchini using the largest hole on the grater. Use a clean kitchen towel to squeeze as much liquid as possible from the shredded zucchini. Discard the liquid. Transfer the shredded zucchini to a large bowl and stir in the eggs, feta cheese, mint, onion, cumin, salt and pepper and then the flour. Heat 1 teaspoon of the olive oil in a large nonstick skillet over medium-low heat. Use a ¼ cup measure to scoop out the fritter batter.

Drop each fritter into the skillet making sure to leave some space between the fritters. Flatten the fritters gently with the back of the measuring cup. Cook the fritters about 3-5 minutes on each side until the fritters are cooked all the way through and are golden brown. Repeat the cooking process with the remaining oil and batter until all the fritters have been cooked.

Banana Fritters

  • 3 medium very ripe bananas
  • 2 large eggs, beaten
  • 2 Tbsp. sugar
  • 3 Tbsp. flour
  • ½ teas. vanilla extract
  • ½ teas. cinnamon
  • 1 teas. powdered sugar
  • cinnamon for topping fritters
  • Butter flavored cooking spray

Mash the bananas. In a mixing bowl combine the bananas, sugar, eggs, flour, ½ teaspoon cinnamon and vanilla. Heat a large nonstick skillet over low flame. When skillet is hot spray with butter flavored cooking spray. Drop the banana fritter batter into the hot skillet using 1 tablespoon of batter for each fritter. Cook the fritters for 1-2 minutes on each side. Repeat the cooking process until all the batter has been cooked. When ready to serve fritters top them with a little powdered sugar and a little cinnamon.
