Cauliflower with Cheese and Herbs

  • 1 medium head cauliflower, chopped
  • 1/3 cup reduced fat cheddar cheese
  • 1 ½ cups fat free milk
  • ¼ cup fat free powdered milk
  • 3 Tbsp. flour
  • ½ teas. garlic powder
  • ½ teas. oregano
  • ¼ teas. basil
  • ½ teas. cayenne pepper, more or less to taste
  • 1 Tbsp. Dijon mustard
  • salt and pepper to taste

Steam the cauliflower for about 3-4 minutes or until it is just tender. Transfer the steamed cauliflower to a medium bowl and keep warm. Whisk together the dry milk powder, flour, salt, pepper, garlic powder, oregano, basil, and cayenne pepper in a saucepan. Place the saucepan over medium heat and slowly whisk in the skim milk. Whisk until there are no more lumps. Stir in the cheese and continue to cook until the cheese melts. Whisk in the Dijon mustard. Pour the sauce over the steamed cauliflower and toss to combine well. Serve.

Cauliflower Rice Balls

  • 2 ¼ cups riced cauliflower
  • 1 Italian chicken sausage link, casing removed
  • ½ cup part skim milk shredded mozzarella cheese
  • ¼ cup breadcrumbs
  • 2 Tbsp. marinara sauce
  • 1 egg, beaten
  • 1 Tbsp. grated parmesan cheese
  • ¼ teas salt

Preheat oven to 425 degrees F. Spray a baking sheet with cooking spray. Spray a medium skillet with cooking spray and place over medium-high heat. Add the sausage meat to the skillet and cook for about 4-5 minutes. Break the meat up into small pieces with a spoon as it cooks You want the sausage meat pieces to be a small as possible. Add the cauliflower to the sausage meat together with the salt and marinara and cook on medium heat for about 6 minutes until the cauliflower is tender. Stir often while this is cooking. Remove the skillet from the heat and stir in the mozzarella cheese. Let this mixture cool until it is easy to handle, about 3-4 minutes.

Scoop out about ¼ cup of the riced mixture and use your hands to shape it into a ball. You want to have 6 rice balls total. Set each rice ball on a plate until all the rice balls are made. Place the beaten egg in a bowl. Place the breadcrumbs combined with the parmesan cheese in another bowl. Dip the rice ball first into the egg and then into the breadcrumb cheese mixture. Transfer the coated rice balls to the prepared baking sheet. Spray the tops of the rice balls with cooking spray. Place baking sheet in preheated oven and bake until the rice balls are golden, about 25 minutes. Additional marinara sauce for dipping may be served with the rice balls.
