Cheddar Garlic Biscuits

2 cups Bisquick Heart Smart baking mix

2/3 cup fat-free milk

¼ cup shredded cheddar cheese

2 Tbsp. unsweetened applesauce

1/8 teas. garlic powder

Preheat oven to 450 degrees F.  Mix all ingredients together to form a soft dough.  Use a spoon to drop 9 portions of dough onto an ungreased baking sheet.  Place baking sheet in preheated oven and bake until biscuits are golden brown, about 8-10 minutes.

Bran Muffins

1 cup whole wheat pastry flour

¼ cup flaxseed

1 cup wheat bran

¼ cup soy flour

1 small granny smith apple, grated with skin on

¼ cup canola oil

¼ cup fat-free milk

½ cup egg substitute

¼ cup unsweetened applesauce

2 teas. baking powder

½ teas. baking soda

¼ cup sugar

¾ teas. cinnamon

½ teas. salt

¼ cup chopped walnuts

¼ cup raisins

Preheat oven to 400 degrees F.  Spray a 12-cup muffin tin with cooking spray.  In a large mixing bowl combine the flours, wheat bran, flaxseed, baking powder, baking soda, sugar, cinnamon, salt, walnuts and raisins.  Add the grated apple, canola oil, egg substitute, milk and applesauce and mix well. Spoon batter into prepared muffin tins and bake in preheated oven for 18-20 minutes until a toothpick inserted in center of the muffin comes out clean.

Cinnamon Cornbread

1 ¼  cup stone-ground cornmeal

¾ cup flour

1//4 cup canola oil

1 cup fat-free milk

2 eggs, beaten

1 teas. baking soda

1 ½ teas. baking powder

¼ teas. salt

3 Tbsp. sugar

1 teas. cinnamon

½ teas. allspice

1/8 teas. ground cloves

Preheat oven to 400 degrees F.  Spray a 9×9 baking pan with cooking spray.  Place ingredients in a large mixing bowl and blend.  You want the batter to be lumpy so do not blend too much.  Pour the batter into the prepared baking ban. If desired, additional cinnamon may be sprinkled over the top and swirled into the batter.  Place pan in preheated oven and bake for 20-25 minutes until the center of the cornbread springs back when touched. Allow cornbread to rest for 5-10 minutes before cutting.

Banana Maple Pecan Muffins

3 medium very ripe bananas

1 ¼ cups whole wheat flour

2 Tbsp. softened unsalted butter 

2 large egg whites

¼ cup brown sugar

¼ cup maple syrup

1/3 cup chopped pecans

¾ teas. baking soda

¼ teas. salt

2 Tbsp. unsweetened applesauce

½ teas. vanilla

Preheat oven to 325 degrees F.  Line a 12-cup muffin pan with cupcake liners.  Mash the bananas and set aside. Using a whisk, combine the flour, baking soda, pecans and salt in a bowl and set aside.  In a large mixing bowl cream together the butter and brown sugar. Add the egg whites, mashed banana, maple syrup, applesauce and vanilla and beat until well mixed.  Add the flour mixture and blend until ingredients are well combined. Spoon the batter into the prepared muffin pan. Place muffin pan in preheated oven and bake for 30-35 minutes until toothpick inserted in the center of the muffin comes out clean.
