Chicken and Noodles with Creamy Sauce, Turkey or Chicken Lo Mein

Chicken and Noodles with Creamy Sauce

  • 2 cups water
  • 4 boneless skinless chicken breasts
  • 6 oz. noodles
  • 2 cups fat free milk, more if needed
  • 2 Tbsp. cornstarch
  • 2 cups cooked broccoli, or peas, or asparagus, or your choice of vegetable

In a large pot bring water to a boil over high heat. Add the chicken breasts, return to a boil, then lower heat. Cover and cook for about 30 minutes or until chicken breasts are done. Remove chicken from pan and set aside. Bring the chicken stock to a boil and add the noodles and boil until tender, but firm. Drain the noodles. (You can save stock for another use, if desired). Cut the chicken breasts into chunks. Return noodles to pan and pour in 1 cup of milk. Turn heat to medium. Meanwhile, in a small bowl, combine the cornstarch with the remaining cup of cold milk. When noodles are hot add the cornstarch mixture and stir well. (If necessary, you can add a little more milk). Add the chicken and cooked vegetables to the pan and cook until sauce is desired thickness.

Note: Vegetables can be served as a side dish instead of being mixed with the chicken and noodles.

Turkey or Chicken Lo Mein

  • 2 cups cooked chicken or turkey breast strips
  • 1 14 oz container low-sodium chicken broth
  • 2 Tbsp. light soy sauce
  • ½ teas sugar
  • ½ teas. ground ginger
  • ¼ teas. garlic powder
  • 1 16 oz package frozen stir fry oriental vegetables (without any sauce)
  • 4 oz uncooked angel hair pasta
  • 2 teas. cornstarch
  • 2 Tbsp. water

In a large skillet over medium-high heat combine the turkey or chicken strips, chicken broth, soy sauce, sugar, garlic powder, ground ginger and oriental vegetables. Bring skillet to a boil, stir in the angel hair pasta, reduce heat to low, cover skillet and simmer for 5-8 minutes, or until pasta is done. Combine the cornstarch and water in a small bowl and blend until smooth. Stir this mixture into the hot mixture in the skillet. Stir constantly until thickened, about 1 minute.
