Chicken Waldorf Salad, Ranch Chicken Salad, Chicken Salad with Spinach and Strawberries

Chicken Waldorf Salad

  • 1 cooked boneless skinless chicken breast (7 oz.), cut into small pieces
  • 1 medium apple, peeled and cut into bite size chunks
  • 1 cup seedless grapes, cut in half
  • 2 Tbsp. chopped walnuts
  • ½ cup chopped celery
  • 6 cups mixed baby greens
  • ¼ cup light mayonnaise
  • 2 Tbsp. fat-free plain Greek yogurt
  • salt and pepper to taste

In a large bowl combine the mayonnaise, yogurt, salt and pepper and mix well. Add the chicken, grapes, apples, celery to this dressing mixture and stir. Let the salad chill in the refrigerator until you are ready to serve. Before serving add the walnuts to the salad. Serve the salad over the baby greens.

Ranch Chicken Salad

  • 2 cups shredded boneless chicken breast. (rotisserie chicken works well)
  • ½ cup 1% buttermilk
  • 3 Tbsp. light mayonnaise
  • ¼ teas. garlic powder
  • ¼ teas. dried parsley
  • 2 Tbsp. fresh chives, chopped fine
  • ¼ teas. onion powder
  • ¼ teas. dried basil
  • salt and pepper to taste
  • 3 cups baby field greens or romaine lettuce

Combine the buttermilk, salt, pepper, garlic powder, chives, onion powder, parsley and basil in a medium bowl and mix well. Add the shredded chicken to the dressing in the bowl and mix well. Salad may be served immediately or refrigerated and served a little later. Serve salad over greens.

Chicken Salad with Spinach and Strawberries

  • 1 lb. boneless skinless chicken breasts
  • 1 teas. garlic powder
  • 1 teas. seasoned salt
  • 6 cups baby spinach
  • 3 cups sliced strawberries
  • 2 oz. goat cheese
  • 3 Tbsp. balsamic vinegar
  • 3 Tbsp. olive oil
  • 1 Tbsp. chopped shallots
  • 1 teas. honey
  • 1 teas water
  • salt and pepper to taste

Whisk the vinegar, olive oil, shallots, honey, water and salt and pepper together in a small bowl. This is the dressing for the salad. Set it aside. Season the chicken with the seasoned salt and the garlic powder. Bring either an outdoor grill or an indoor grill to medium heat. Spray the grates with oil and grill the chicken for 10-11 minutes on each side until the chicken is cooked through in the center and charred on the outside. Place the grilled chicken on a cutting board and slice the chicken on an angle. Place the spinach in a large bowl and toss the spinach with the prepared dressing. Top the spinach with the sliced strawberries, goat cheese and sliced grilled chicken.
