Chopped Feta Salad, Chopped Wedge Salad, Chopped Shrimp, Bacon and Blue Cheese Salad, Chopped Italian Salad

Chopped Feta Salad

  • 8 cups chopped romaine lettuce
  • ½ cup crumbled Feta cheese
  • 1 medium cucumber, peeled and diced
  • ½ small onion, diced
  • ¼ cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1 ½ Tbsp. chopped fresh dill
  • salt and pepper to taste

Place all the ingredients in large salad bowl and toss to mix well. Serve right away. Recipe makes 4 servings, 2 cups each Estimate WW Smart points 5 per serving.

Chopped Wedge Salad

  • 8 cups chopped lettuce, either romaine, butter or iceberg lettuce
  • 1 cup cherry tomatoes cut in halves
  • 5 slices cooked bacon, crumbled
  • ¼ cup crumbled blue cheese


  • 6 oz. fat free plain Greek yogurt
  • 1 Tbsp. light mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. vinegar
  • ½ cup crumbled blue cheese
  • Salt and pepper to taste

Mash blue cheese and yogurt together with a fork. Stir in mayonnaise, vinegar and lemon juice. Stir in salt and pepper. In a large salad bowl or on a platter layer the lettuce and top the lettuce with the tomatoes, crumbled bacon and blue cheese. Serve with the blue cheese dressing. Recipe makes 4 servings 1 ½ cups of salad and 2 tablespoons of dressing each.Estimated WW Smart points 4 per serving.

Chopped Shrimp, Bacon and Blue Cheese Salad

  • 4 oz. chopped butter, iceberg or romaine lettuce
  • 4 slices of bacon, chopped
  • ½ lb. raw shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 cup corn kernels
  • 1 oz. blue cheese, crumbled
  • ½ cup cherry tomatoes, halved
  • 2 teas. olive oil
  • salt and pepper to taste

Cook the bacon in a skillet over medium heat until the bacon is crisp. Remove cooked bacon using a slotted spoon and drain the bacon on paper towels. Retain 1 teaspoon of the bacon grease in the skillet and discard the rest of the grease. Add the shrimp and garlic to the bacon grease in the skillet and cook for about 3 minutes until shrimp is opaque. Remove shrimp and chop it into smaller pieces. In a large salad bowl toss all the ingredients together. Serve right away.

Chopped Italian Salad

  • 4 cups chopped romaine lettuce
  • 1 oz. genoa salami, sliced
  • 6 Tbsp. shredded part-skim mozzarella cheese
  • ½ roasted red pepper (in water), chopped
  • ½ cup cucumber, peeled and chopped
  • ½ cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • salt and pepper to taste

In a large salad bowl toss together the lettuce, tomato, onion, cucumber, oil and vinegar and salt and pepper to taste. Top the tossed salad with the red pepper, salami and mozzarella and serve. Recipe makes 2 servings Estimated WW Smart points 8 per srving
