Cinnamon Pancakes, Oatmeal and Cottage Cheese Pancakes, Ricotta and Lemon Pancakes, Flourless Banana-Blueberry Pancakes

Cinnamon Pancakes

  • 1 ¼ cups whole wheat flour
  • 1 teas. baking powder
  • 1 packet artificial sweetener (such as Stevia or Splenda)
  • 1 cup fat-free milk
  • ½ cup egg substitute
  • 1 teas. vanilla extract
  • 1 ½ teas. ground cinnamon

Mix together the flour, sweetener and baking powder in a bowl. In another bowl mix together the milk, egg substitute and vanilla. Beat the liquid ingredients into the dry ingredients. Stir in the cinnamon last. Spray a skillet or griddle with cooking spray. Place pan on stove over medium heat. Use 1/3 cup of pancake batter for each pancake. Cook pancakes on heated skillet or griddle over medium heat. Turn pancakes once when the edges begin to set and cook on the other side. Oatmeal and Cottage Cheese Pancakes

  • ½ cup oatmeal, dry
  • ½ cup fat-free cottage cheese
  • 4 egg whites
  • ½ teas. vanilla
  • ½ teas. baking powder
  • 1 packet artificial sweetener (such as Stevia or Splenda)

In a blender blend together the cottage cheese, egg whites, baking powder, vanilla and sweetener. When the batter is smooth add the oats and pulse a few times. You want the batter to be a little lumpy. Let the batter sit for a few minutes to thicken a little. Spray a griddle or skillet with cooking spray. Cook pancakes in skillet or griddle over medium heat until they are lightly browned on each side, 2 or 3 minutes per side. Recipe makes 6 servings Estimated WW Smart points 1 per serving.

Ricotta and Lemon Pancakes

  • ½ cup part-skim milk ricotta cheese
  • 2 tbsp. lemon zest
  • 1 ½ cups flour
  • 1 teas. baking soda
  • ½ teas. salt
  • 1 cup low-fat buttermilk
  • 2 large eggs, separate the whites and the yolks
  • 2 Tbsp. sugar

Combine the flour, baking soda ad salt in a small bowl. Mix together by hand in a large bowl the buttermilk, ricotta cheese, egg yolks, sugar and lemon zest. Using an electric mixer and a clean bowl beat the egg whites until soft peaks form. Stir the flour mixture into the buttermilk mixture until just combined. Gently fold in the beaten egg whites. Spray a skillet or griddle with cooking spray. Place pan on stove over medium heat. Spoon ¼ cup of batter onto the warm pan for each pancake. Cook for 2-3 minutes per side or until lightly browned. Flourless Banana-Blueberry Pancakes

  • 2 medium ripe bananas
  • ½ cup fresh blueberries
  • 3 large eggs, beaten
  • ½ teas. vanilla extract
  • ¼ teas. ground cinnamon
  • ¼ teas. baking powder

Mash 1 ½ bananas in a medium bowl. Set the remaining ½ banana aside to slice later. Whisk the eggs, vanilla, baking powder and cinnamon into the bowl with the bananas until well blended. Spray a large skillet or griddle with cooking spray and place over medium heat. For each pancake spoon 2 tablespoons of batter onto the skillet or griddle. Cook pancakes until the edges are set and the bottoms are golden, about 1 minute. Using a thin spatula carefully flip the pancakes and cook on the other side until golden.
