Corn On The Cob 

Corn on the cob is a very popular dish during the warm months.  There are many different ways to cook corn on the cob and here are several recipes you may want to try. 

A fast and easy way to prepare corn on the cob for 1 or 2 people is in the microwave.  The corn on the cob can be cooked either with the husk or without the husk. Microwave corn on the cob 

Husk and clean your ear of corn. 

Wet a paper towel and wrap the ear of corn in the wet paper towel.  Place the wrapped corn on a microwave safe plate.  Microwave the corn on high for 4-5 minutes.  Remove corn from microwave and carefully remove the paper towel.

Rinse the ear of corn under running water. Wrap corn in paper towel and place on a microwave safe dish.  Microwave on high for 3-4 minutes until corn is hot and cooked through.  Remove from microwave.  Allow to cool for a few minutes.  Remove corn husk.

In a large pot add water until the pot is between ½ and ¾ full.  Be sure pot has enough water to cover the ears of corn you are cooking.  Add 2 tablespoons of sugar and stir into the water.  Bring water to a rolling boil.  Add the ears of corn. Cover pot, turn off the heat, and let corn cook in the hot water about 10 minutes or until tender.  Remove corn from pot with tongs. 

Oven roasted corn on the cob 

  • 1 stick of softened buttercorn on the cob that has been cleaned, husk removed 
  • Salt & pepper to taste 

Preheat oven to 400 degrees.  Tear sheets of aluminum foil larger than the ears of corn.  One sheet of foil for each ear of corn.  Spray the foil with cooking spray so corn does not stick to it.  Rub the stick of softened butter all over each ear of corn.  Add salt and pepper to taste.  Wrap each ear of corn in a piece of foil and be sure the corn is completely covered and the packet is sealed.  Place the corn in the foil on a baking sheet and place in preheated oven.  Bake approximately 15 minutes and then turn the corn over and bake another 10-15 minutes until corn is done. 

Grilled corn on the cob in husks 

When you grill your corn on the cob in its husk it stays more moist and tender. Take your ears of corn and gently pull the husk down almost to the base. Do not remove the husk.  Remove the silk and then smooth the husks back up over the corn.  Place the corn in the husks in a pan of ice water and soak the corn for 20-30 minutes.   

Meantime oil the grill to prevent the corn from sticking.  Preheat the grill. 

Remove the corn from the water and shake off the excess water.  Place the corn in the husk directly on the grill about 5 inches from the medium-hot coals.  Turn the corn occasionally while it is cooking.  Cook until tender – about 15 minutes.
