Crustless Zucchini Pie

Crustless Ham and Swiss Cheese Quiche 

5 large eggs 

1 ¾ cups diced ham 

1 cup chopped steamed broccoli 

1 cup grated Swiss cheese 

2/3 cup 2% milk 

¼ cup half and half cream 

pinch of nutmeg 

salt and pepper to taste 

Preheat oven to 350 degrees F.  Spray a pie pan with cooking spray.  Spread the steamed broccoli over the bottom of the pie pan.  Spread the diced ham over the broccoli.  In a mixing bowl whisk together the eggs, milk, half and half cream, nutmeg and salt and pepper.  Pour the egg mixture over the broccoli and ham in the pie pan.  Sprinkle the grated cheese over the top.  Place the pie pan in the preheated oven and bake for about 35-40 minutes or until the center of the quiche is set.

Crustless Zucchini Pie 

10 oz. shredded zucchini (squeeze out the excess liquid from the zucchini) 

½ cup part skim shreddemozzarella cheese 

2 Tbsp. grated parmesan cheese 

2 large eggs, beaten 

½ cup shallots, chopped 

¼ cup fresh chives, chopped 

½ cup whole wheat flour 

2/3 cup fat free milk 

1 teas. baking powder 

1 teas. olive oil 

salt and pepper to taste 

Preheat oven to 400 degrees F.  Spray a pie pan with cooking spray.  Combine the zucchini, shallots, chives and mozzarella cheese in a large mixing bowl.  Sift the flour and baking powder into another bowl.  Add the milk, olive oil, beaten eggs, and salt and pepper to the bowl with the flour and mix well.  Pour the egg mixture into the bowl with the zucchini and mix well.  Pour this mixture into the prepared pie pan and sprinkle the top with the parmesan cheese.  Place the pie pan in the preheated oven and bake for about 30-35 minutes or until a knife inserted into the center of the pie comes out clean.  Let pie stand for about 5 minutes before serving.
