Deviled Eggs with Guacamole, Air Fryer Avocado Fries, Crab Stuffed Avocado

Deviled Eggs with Guacamole

  • 6 hard-boiled eggs
  • 1 medium hass avocado
  • 2 teas. lime juice
  • 1 teas. minced onion
  • 1 Tbsp. minced jalapeno
  • 1 Tbsp fresh cilantro, chopped
  • 1 Tbsp. diced tomato
  • Salt and pepper to taste

(Note: To cook hard boiled eggs place the eggs in a saucepan and cover with cold water. Place pan on stove and bring water to a rolling boil. Turn off heat, cover pan and allow the eggs to sit in the hot water for 15 minutes. Drain the water and then run cold water over the eggs to stop the cooking.) Peel the cooled hard-boiled eggs, cut them in half horizontally, remove yolks. Retain 2 of the egg yolks and discard the other 4 yolks or use them for another purpose. Cut the avocado open, remove pit and scoop out the avocado. In a bowl, mash together the avocado with the 2 egg yolks. Stir in the onion, lime juice, jalapeno pepper, cilantro and salt and pepper. Fold in the tomato. Scoop the guacamole into the halved eggs. Recipe makes 6 servings Estimated WW Smart points 1 per serving.

Air Fryer Avocado Fries

  • 2 small hass avocados
  • 1 large egg
  • ¾ cup panko breadcrumbs
  • 1 ¼ teas. lime chili seasoning salt

Preheat the air-fryer to 400 degrees F. Peel and pit the avocados and cut them into 16 wedges. In a small bowl lightly beat the egg. Place the breadcrumbs in another bowl and add the chili seasoning salt to the breadcrumbs. Dip each avocado wedge into the egg and then into the breadcrumbs. Spray both sides of the avocado wedges with cooking spray and place in the air fryer. Cook avocado wedges for 7 or 8 minutes. Turn wedges over halfway through the cooking time. Crab Stuffed Avocado

  • 4 oz. lump crab neat
  • 1 small hass avocado, pitted and peeled
  • 2 Tbsp. light mayonnaise
  • 2 teas. siracha sauce
  • 1 teas. fresh chives, chopped
  • ¼ cup peeled and diced cucumber
  • ½ teas. sesame seeds, optional
  • light soy sauce for drizzle

Cut the avocado open and remove the pit. Spoon out most of the avocado. (Use avocado for another purpose) Combine the mayonnaise, soy sauce and siracha sauce in a medium bowl. Gently add the crab meat, chives and cucumber and toss. Divide the crab meat mixture into two portions and fill each half of the avocado with a portion of crab meat. Top the crabmeat with the sesame seeds, if desired, and drizzle with soy sauce. Recipe makes 2 servings Estimated WW Smart points 5 per serving.
