Deviled Eggs with Tuna Salad

8 large hard-boiled eggs, halved

2 6 oz. cans tuna packed in water, drained

1/3 cup light mayonnaise

1 Tbsp. minced onion

1 teas. red wine vinegar

chopped fresh chives for garnish, optional

salt and pepper to taste

Remove the egg yolks from the hard-boiled eggs and place the yolks in a bowl.  Combine the egg yolks and the mayonnaise and mash together. Add the tuna, onion and red wine vinegar to the yolk mixture and stir to combine.  Spoon heaping spoons of the tuna-egg mixture into the 16 halved eggs. Garnish with chives if desired.

Parmesan Crisps

½ cup freshly grated Parmesan cheese (use the large holes of a box grater to grate the cheese)

¾ cup minced dried onion flakes

¾ cup minced dried garlic flakes

¾ teas. poppy seeds

¾ teas. sesame seeds

Preheat oven to 400 degrees F.  Spoon 2 tablespoons of the grated cheese onto a baking sheet. (A silicone line baking sheet works best for this)  Pat the cheese down with your fingers to make a round of about 4 inches. Repeat this process 3 more time with the remaining cheese to form 4 rounds.  Leave at least ½ inch between rounds. Bake until the rounds are almost done, about 3 minutes. In a small bowl combine the onion, garlic, sesame seeds and poppy seeds.  Top each cheese round with ¼ of this mixture. Return baking sheet to oven and bake until the cheese rounds are golden and crisp, about 5 minutes. Cool the crisps before eating.

Recipe may be doubled or tripled if you want to make more servings.

Roasted Pumpkin Seeds

Seeds from one pumpkin

Kosher salt to taste

Olive oil spray

Remove the seeds from the pumpkin and clean off the seeds.  Wash the seeds and place them on a baking sheet to dry overnight.  After the seeds have dried, preheat the oven to 250 degrees F. Spread the seeds evenly over a baking sheet and lightly spray the seeds with olive oil spray.  Season the seeds with kosher salt to taste. Roast the seeds in the preheated oven until the seeds become golden brown, about l and ¼ hours. Allow seeds to cool before eating.

Smoked Salmon Pinwheels

8 oz. thinly sliced cold smoked salmon

¼ medium cucumber, cut into matchsticks

2 Tbsp. red onion, finely chopped

2 Tbsp. capers, drained

4 oz. 1/3 less fat cream cheese

½ lemon, sliced thin

Place a large sheet of plastic wrap on a work surface.  Arrange the slices of salmon in an overlapping fashion on the plastic wrap so that you create a rectangle approximately 6-inches wide by 12-inches long.  The longest side should be facing you. Spread the cream cheese gently over the salmon trying not to move any of the salmon pieces. Lay the cucumber sticks along one side of the rectangle , leaving about ½ inch margin from the edge.  Use the plastic wrap as a guide to roll the salmon up tightly around the cucumber sticks. Refrigerate the salmon roll until firm, at least 30 minutes. Use a sharp knife to cut the salmon roll into 16 slices. Sprinkle the red onion and capers over to salmon pinwheels and serve with the lemon slices.
