Easy Spaghetti Casserole

  • 1 lb. angel hair pasta
  • 2 lb. lean ground beef
  • 1 medium onion, diced
  • ½ stick butter or margarine
  • ½ cup grated Parmesan Cheese
  • 48 oz spaghetti sauce
  • 1 cup sliced mushrooms
  • 8 oz shredded mozzarella cheese

Preheat oven to 350 degrees F. Allow butter or margarine to soften. Cook angel hair pasta according to package directions. Drain the cooked pasta. Toss the cooked pasta with the butter or margarine and Parmesan cheese. Spray a large casserole dish with cooking spray. Place the pasta in the bottom of the casserole dish. Brown the qround beef and onion in a skillet over medium heat until beef has browned. Drain the meat and onion. Add the mushrooms to the ground beef and onion. Mix together your favorite spaghetti sauce, the ground beef and mushrooms and onions. Pour the sauce mixture over the spaghetti in the casserole dish. Top with the shredded cheese. Place casserole dish in preheated oven and bake until sauce bubbles and cheese starts to melt, about 20-25 minutes.

Spaghetti Pie

  • 6 oz spaghetti
  • 1 lb. lean ground beef
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 2 Tbsp butter or margarine, softened
  • 1 cup cottage cheese
  • 1 Tbsp vegetable oil
  • ¼ cup green pepper, chopped
  • 1 medium onion, chopped
  • 1 cup Roma tomatoes, chopped
  • 6 oz tomato paste
  • 1 teas sugar
  • 1 teas dried oregano
  • ¼ teas garlic powder
  • Salt & pepper to taste

Cook spaghetti according to package directions to the al dente (firm) stage. Drain pasta. Add the eggs, butter or margarine and Parmesan cheese to the pasta. Preheat oven to 350 degrees F. Spray a 10- inch pie pan with cooking spray. Mix and shape the pasta, egg, butter or margarine and Parmesan cheese mixture into a crust for your pie pan. Lightly pat spaghetti into shape in the pie pan. Top this spaghetti crust with the cottage cheese. Use the back of a spoon to smooth out the cottage cheese. Place the 1 tablespoon of vegetable oil in a large skillet over medium high heat. When oil is hot add the ground beef and the green pepper and onion. Cook and stir the beef and vegetables until beef is browned. Add the tomatoes, tomato paste, sugar, oregano, garlic powder and salt and pepper to the mixture in the skillet. Heat and stir this mixture for 2-3 minut4es then spread this mixture over the cottage cheese. Place casserole dish in preheated oven and bake uncovered for 30 minutes. After 30 minutes sprinkle the shredded mozzarella cheese over the casserole dish and bake for an additional 5 to 10 minutes until cheese is bubbly and beginning to brown.
