Edamame Hummus

1 ½ cups edamame, cooked and shelled

2 Tbs. tahini paste

1 teas. lemon zest

Juice of 1 lemon

1 clove garlic, crushed

1 teas. olive oil

salt and pepper to taste

¼ cup water, or as needed

Place the edamame, water, tahini paste, lemon juice and zest, garlic, salt, pepper and the olive oil in a blender or food processor and blend until smooth.  Add more water if necessary, until the consistency is smooth. Place in covered bowl, chill before serving.

Chipotle Hummus

1 15 ½ oz can garbanzo beans, rinsed and drained

¼ cup tahini paste

¼ cup lemon juice

2 Tbsp. olive oil

1 canned chipotle pepper in adobo sauce

1 7 oz. jar roasted red bell pepper, drained

½ cup oil-packed sun-dried tomato, drained

2 cloves garlic, crushed

1 ½ teas. cumin

½ cup fresh cilantro, chopped

½ cup water

salt and pepper to taste

Place the garbanzo beans, water, tahini paste, lemon juice, olive oil, chipotle pepper, garlic,  cumin in a blender or food processor and blend until smooth. If needed, add more water to make a smooth consistency.   Add the red peppers, sun-dried tomatoes, cilantro and salt and pepper and pulse until coarsely chopped. Transfer to a covered bowl and chill before serving.

Jalapeno Hummus

1 cup garbanzo beans, rinsed and drained 

1/3 cup canned jalapeno sliced peppers, reserve juice

3 Tbsp. tahini paste

3 cloves garlic, minced

2 Tbsp. lemon juice

½ teas. ground cumin

½ teas. curry powder

Crushed red pepper flakes to taste

Place the garbanzo beans, the jalapeno pepper with the reserved juice, tahini paste, garlic and lemon juice in a blender or food processer and blend until smooth.  Add the cumin, curry powder and crushed red pepper flakes and blend again. Transfer to covered bowl and chill before serving.

Spicy Hummus

1 15 oz. can garbanzo beans, rinsed and drained

¼ cup olive oil

¼ cup lime juice

2 Tbsp. tahini paste

1 clove garlic, minced

1 teas. paprika

1 teas. ground cayenne pepper

¼ teas. ground cumin

1 Tbsp. water or more as needed

Place the garbanzo beans, olive oil, lime juice, tahini paste and garlic in a blender or food processer and blend until smooth.  Add water 1 tablespoon at a time until mixture reaches desired consistency. Add the paprika, cayenne pepper and cumin and blend.  Transfer to covered bowl and chill before serving.

1 16 oz. can garbanzo beans, rinsed and drained

3 Tbsp. tahini paste

2 Tbsp. lemon juice

6 cloves garlic, minced

1 Tbsp. olive oil

¼ teas. paprika

salt and pepper to taste

Place the garbanzo beans, tahini paste, lemon juice, olive oil, salt, pepper, paprika and garlic in a food processor or blender and blend until smooth.  Add water if needed to reach desired consistency. Transfer to covered bowl and chill before serving.
