Flounder Filet Stuffed with Feta Cheese and Spinach

  • 1lb. flounder fillets (cut into 4 fillets)
  • 1 10 oz. package fresh spinach
  • ¼ cup Feta cheese crumbled
  • 1 clove garlic, minced
  • ¼ cup chopped onion
  • 1 Tbsp. ground oregano
  • 1 Tbsp. paprika
  • 1/8 tsp. ground nutmeg
  • 1 Tbsp. grated Parmesan cheese
  • 1 Tbsp. olive oil
  • salt and pepper to taste

Heat oil in a large skillet over medium heat. Add the garlic and onion to the skillet and sauté for 2 minutes. Add the spinach to this mixture and sauté for about another 3 minutes. Turn off the heat and add the feta cheese and Parmesan cheese and stir. Add the nutmeg and salt and pepper. Set this mixture aside to cool. Preheat oven to 400 degrees F. Spray baking dish with cooking spray. Sprinkle salt and pepper over fish fillets. Place 2 tablespoons of cooled spinach-cheese mixture onto the center of each fish fillet. Roll fish fillet around filling and secure with toothpick. Place fish into baking dish with the seam side of the fish fillet down. Spray the fish fillets with cooking spray. Sprinkle the oregano and paprika over fish fillets. Bake in preheated oven until fish flakes easily with a fork, about 30 minutes.

Tilapia with Parmesan Cheese–Broiled

  • 1 lb. tilapia fillets
  • ¼ cup Parmesan cheese
  • 2 Tbsp. softened butter
  • 1 1/3 Tbsp. light mayonnaise
  • 1 Tbsp. lemon juice
  • 1/8 teas. dried basil
  • 1/8 teas. onion powder
  • salt and pepper to taste

Preheat the oven’s broiler. Grease broiling pan or line pan with aluminum foil. In a small bowl, mix together the Parmesan cheese, softened butter, mayonnaise, and lemon juice. Stir in dried basil and onion powder. Sprinkle fish fillets with salt and pepper. Arrange fish fillets in a single layer on broiler pan. Broil a few inches from the heat for 2 minutes. Turn fillets over and broil for another 2 minutes. Remove pan from broiler and top each fish fillet with the cheese mixture. Return pan to broiler and broil for about 2 more minutes or until topping is browned and fish flakes easily with a fork. Be careful not to overcook the fish.
