Fruit Salads 

Ambrosia 

  • 1 15 oz can pineapple chunks
  • 2 large oranges, peeled 
  • 2 apples
  • 2 medium bananas 
  • 1 cup chopped walnuts
  • ¼ cup 10X sugar 
  • 1 cup flaked coconut
  • 3 Tbsp orange juice 
  • maraschino cherries, optional 

Peel and slice the banana.  Peel, core and slice the apple.  Cut the oranges crosswise into slices.  Remove any seeds.  Drain pineapple chunks and reserve liquid.  In a large serving bowl place one-half of the apple slices, top with one half of the oranges slices and then layer one half of the walnuts.  Sprinkle one-half the 10X sugar over the fruit.  For the next layer place one half the banana slices and then half the pineapple chunks and one-half the coconut.  Then repeat a layer of the remaining apple slices, followed by a layer of the remaining walnuts, the remaining oranges slices, banana slices and pineapple slices.  Combine the reserved pineapple juice with the orange juice.  Pour this liquid over the fruit and top with the remaining coconut.  Top with the maraschino cherries, if using.  Refrigerate before serving. 

Layered fruit salad 

  • 2 cups shredded lettuce
  • 2 cups melon  
  • 2 cups pineapple chunks
  • 1-pint strawberries 
  • 1 medium banana
  • 3 peaches 
  • 1 8oz carton peach yogurt
  • ¼ cup shredded Cheddar cheese 

Dice fresh pineapple into chunks or if using canned pineapple, drain it well.  Cut melon into chunks.  Slice banana dice the peaches and cut strawberries in half.  In a glass serving bowl first layer one half the lettuce.  Then layer the melon, the pineapple, the strawberries, the banana, and last the peaches. 

Place the remaining lettuce over the top of the fruit. Spread the yogurt over the lettuce and sprinkle with the shredded cheddar cheese.  Chill before serving. 

Orange cloud salad

  • 1 pt. sour cream
  • 1 lg box orange Jello 
  • 8 oz Cool Whip, thawed
  • 6 oz can mandarin oranges, drained 
  • 6 oz crushed pineapple drained
  • 1 cup miniature marshmallows 

Place the pineapple and oranges in mixing bowl, Add the sour cream, Cool Whip and the dry Jello powder.  Mix well.  Stir in marshmallows.  Refrigerate before serving. 

Watergate salad 

  • 2 3 ½ oz packages instant pistachio pudding mix
  • 1 cup maraschino cherries, chopped 
  • ½ cup chopped walnuts
  • 1 can 20oz crushed pineapple, drained 
  • 1 8 oz container Cool Whip thawed 

Combine dry pudding mix, drained pineapple, cherries and walnuts and mix well.  Stir in Cool Whip.  Refrigerate before serving. 

Waldorf salad 

  • 1 cup diced apples, with skin
  • 1 Tbsp lemon juice 
  • 1 cup chopped walnuts
  • ¼ teas ground cinnamon 
  • ½ cup raisins
  • ¼ cup mayonnaise 
  • ¼ cup sour cream 

In mixing bowl, toss the apples with the lemon juice.  Add the walnuts, raisins, cinnamon, mayonnaise and sour cream and mix well.  Transfer to serving bowl.  Chill before serving.
