Granola, Muesli, Oatmeal Bars, Granola Bars

Granola

  • 5 cups old-fashioned oats
  • 1 cup flaked coconut
  • 1 cup brown sugar
  • 1 cup wheat germ
  • 1 Tbsp. ground cinnamon
  • 1 teas. ground nutmeg
  • ½ cup water
  • ½ cup vegetable oil
  • 1 Tbsp. vanilla extract
  • ½ cup raisins or craisins
  • ½ cup sliced almonds, pecans or chopped walnuts

Preheat oven to 325 degrees F. Spray a baking sheet with cooking spray. In a mixing bowl, combine the oats, brown sugar, wheat germ, coconut, cinnamon and nutmeg. Stir the oil, water and vanilla extract into this oat mixture. Pour the granola mixture onto the prepared baking sheet and spread the mixture over the sheet. Bake in preheated oven about 1 hour until mixture is brown and crunchy. Stir every 15 minutes while mixture is baking. Remove baking sheet from oven and transfer granola to mixing bowl. Stir in the nuts and the raisins or craisins. Allow granola to cool. Store in an airtight container at room temperature.

Muesli

  • 1 cup crispy rice cereal
  • 4 cups rolled oats
  • ½ cup toasted wheat germ
  • ½ cup chopped pecans
  • ½ cup raisins or craisins
  • ½ cup chopped almonds
  • ½ cup dried cherries
  • ¼ cup raw sunflower seeds

In a large mixing bowl combine the oats, rice cereal, toasted wheat germ, raisins or craisins, dried cherries, pecans, almonds and sunflower seeds and mix well. Store the muesli in an airtight container at room temperature.

Oatmeal Bars

  • 4 cups quick cooking oats
  • 1 cup coconut
  • 1 cup brown sugar
  • 1 teas salt
  • ¾ cup orange marmalade
  • 1 ½ cups chopped walnuts
  • ¾ cup softened butter or margarine
  • ½ cup raisins or craisins

Preheat oven to 375 degrees F. Spray aa 15x10x1 baking sheet with cooking spray. In a large mixing bowl combine the oats, brown sugar and salt. Stir in the coconut, marmalade, butter or margarine, raisins or craisins, and walnuts. Press mixture into prepared baking pan. Bake in preheated oven until golden brown, about 20 minutes.

Granola Bars

  • 2 cups rolled oats
  • 2 Tbsp. creamy peanut butter
  • ½ cup shredded coconut
  • ½ cup honey
  • 1 teas. vanilla extract dash salt
  • ½ cup mini chocolate chips, optional

Preheat oven to 325 degrees F. Spray a 9-inch square baking dish with cooking spray and set aside. Spread the oats and coconut on a baking sheet and toast the oats and coconut in the preheated oven until browned, about 10 minutes. Remove from oven and transfer the oats and coconut to a large mixing bowl. In a saucepan over medium heat combine the honey, peanut butter, salt and vanilla extract and mix well.

Cook and stir this mixture until smooth. Pour this liquid mixture over the oats and coconut in the mixing bowl and stir to coat. Stir in the chocolate chips, if using. Spread the mixture into the prepared baking dish. Place in preheated oven and bake until mixture begins to dry. Bake for about 15 minutes if you prefer crunchy granola bars or bake for less time if you like the bars chewy. Allow the granola mixture to cool and then cut into bars.
