Green Beans 

Green Bean Casserole 

2 10 oz. packages frozen green beans1 can cream of mushroom soup 

¼ cup milk1 3 oz can French fried onions 

Cook beans according to package directions until tender, drain.  Spray 2 qt. baking dish with cooking spray. Preheat oven to 350 degrees F.   Place green beans in casserole, add the mushroom soup, milk and ½ the can of fried onions.  Stir. Place casserole dish in preheated oven, Bake for 20 minutes.  Sprinkle other ½ can fried onions over top of casserole and bake for an additional 5 minutes. 

Baked Green Beans with Bacon 

1 lb. fresh green beans3 slices bacon 

1 medium onion, diced1 cup sliced fresh mushrooms 

1 10 ½ oz low sodium chicken brothsalt & pepper to taste 

Cut green beans into 1-inch pieces.  Spray a 2-quart baking dish with cooking spray. Preheat oven to 350 degrees F.   In skillet over medium heat cook the bacon until crisp. Remove bacon from pan and drain on paper towels.   Break up bacon into small pieces and set aside.  Add the onion and mushrooms to the same skillet and cook in the bacon drippings until soft.  Stir in the chicken broth and salt & pepper.  Place beans in the baking dish, Pour the mixture from the skillet over the beans. Cover baking dish and bake for 40-45 minutes or until beans are tender.  Sprinkle top of dish with cooked bacon pieces. 

Green Beans and Almonds 

1 16 oz package frozen green beans, thawed4 slices bacon 

½ cup slivered almonds¼ cup butter or margarine 

Salt & pepper to taste 

In a large skillet over medium heat cook the bacon until browned.  Add the almonds to the skillet and cook stirring until the almonds are light golden brown.  Remove bacon from skillet, drain on paper towels.  Crumble bacon and return to skillet.  Melt the butter in the same skillet along with the bacon drippings.  Add the green beans and cook until tender.  Stir frequently. 

Sweet and Sour Green Beans 

2 cans 16 oz each whole green beans3 slices bacon 

2 Tbsp chopped onion1 Tbsp sugar 

2 Tbsp vinegarSalt & pepper to taste 

In large skillet over medium heat cook bacon until crisp.  Remove bacon from pan, drain on paper towels, crumble and set aside.  In same skilled with the bacon drippings sauté onion until translucent.  Add the vinegar, sugar, salt and pepper and mix well.  Stir in the green beans.  Cover skillet and simmer for 5 to 10 minutes stirring occasionally.  Sprinkle crumbled bacon over dish before serving. 

Italian Green Beans  

1 10 oz package frozen Italian green beans2 teas minced garlic 

2 teas Italian seasoning2 Tablespoons olive oil 

¼ cup Parmesan cheeseSalt & pepper to taste 

Cook green beans according to package directions until tender. Drain.  Add olive oil to large skillet.  Combine green beans, Italian seasonings, garlic and salt and pepper. Place green bean mixture in skillet with heated olive oil and sauté for a few minutes until hot.  Toss with the Parmesan cheese and serve.
