Holiday Cookies

Sugar Cookies, Rolled

  • 3 cups sugar
  • 7 cups flour
  • 2 cups butter or margarine
  • 4 eggs
  • 2 cups buttermilk
  • 2 teas. vanilla extract
  • 2 Tbsp. baking powder
  • ¾ Tbsp. baking soda
  • ½ teas salt
  • Sugar for topping cookies, optional

In a large mixing bowl cream the sugar and butter or margarine together. Add the eggs and the vanilla and mix until smooth. In another bowl sift together the flour, baking soda, baking powder and salt. Add the dry ingredients, alternating with the buttermilk, to the butter or margarine and egg mixture. The dough should be soft, not liquid. Chill dough in refrigerator for at least 2 hours. Preheat oven to 375 degrees F. Grease cookie baking sheets lightly. Lightly flour the counter surface and the rolling pin.

Roll the dough out to ¼ inch thickness. Flour the cookie cutter and cut out the cookie shapes you choose. Place cookies on prepared baking sheet, sprinkle the tops of the cookies with sugar and bake the cookies for 10 to 12 minutes or until lightly browned, in preheated oven. Remove the cookies to a wire rack to cool. Note: If you prefer to frost your sugar cookies, then do not sprinkle the tops of the cookies before baking. When the cookies are cool frost with your favorite frosting.

Sugar Cookies, Dropped

  • 1 ½ cups sugar
  • 2 ½ cups flour
  • 1 cup butter or margarine, softened
  • ¾ teas. salt
  • ½ teas. baking soda
  • 1 teas. vanilla extract
  • 1 egg
  • 2 Tbsp. milk
  • Sugar for topping cookies

Preheat oven to 400 degrees F. Lightly grease cookie baking sheets. In a mixing bowl sift together the flour, salt and baking soda. In another bowl beat the sugar, butter or margarine, and vanilla extract together until well mixed. Add the egg to this mixture and beat until creamy. Stir this creamy mixture into the flour mixture and stir until smooth. Add milk and continue to stir. Drop teaspoons full of the batter onto the prepared baking sheet. Flatten the dough and sprinkle with sugar. Bake cookies in preheated oven about 10-12 minutes or until lightly browned on the edges. Remove cookies to a wire rack for cooking.

Stained Glass Cookies

  • 3 cups flour
  • 1 cup sugar
  • 2/3 cup butter or margarine
  • 2 eggs
  • 1/3 cup milk
  • ½ teas. vanilla extract
  • 2 teas. bakin
  • g powder
  • ½ teas. salt
  • 40 hard candies

Preheat oven to 350 degrees F. Grease cookie baking sheets well with butter or margarine or shortening. In a large mixing bowl cream the butter or margarine and sugar together and then stir in the eggs and vanilla. In another bowl sift together the flour, salt and baking powder. Add this sifted flour mixture to the creamed sugar and butter or margarine mixture, alternating with the milk. On a lightly floured surface, roll the dough to ¼ inch thickness. Use a floured cookie cutter to cut the dough into the cookie shape your desire. Cut a hole in the center of each cookie where you want the stained glass to be. Place the cookies on your well-greased baking sheet.

Place hard candies of the same color in a plastic bag and crush with a meat mallet. Place the crushed hard candy within the open space in the center of the cookie dough on the baking sheet. Bake the cookies for about 6 minutes, or until candy is just melted. Cool the cookies on the baking sheet for 5 minutes, or until the candy center of the cookie is hard. Carefully lift the cookies from the baking sheet with a spatula.
