Hominy Recipes 

Hominy and Cheese with Chili Pepper 

  • 3 15 oz cans white hominy8 oz sour cream 
  • 1 4 oz can chopped green chili peppers, drained1 dash cayenne pepper 
  • 2 cups Cheddar cheese, shredded 

Drain the cans of hominy.  Preheat oven to 350 degrees F.   Spray a 2-quart casserole dish with cooking spray.  In mixing bowl combine all the ingredients and mix well.  Pour into prepared casserole dish.  Bake in preheated oven for approximately 25 minutes. 

White Chili 

  • 1 ½ lbs. ground turkey4 cups low sodium chicken broth 
  • 2 15 oz cans cannellini beans1 15.5 oz can white hominy 
  • 1 Tbsp olive oil1 medium onion 
  • 3 stalks celery3 poblano peppers 
  • 2 cloves garlic, minced1 ¼ teas ground cumin 
  • ½ teas ground coriandercayenne pepper to taste 
  • ¾ teas dried oreganosalt & pepper to taste 

Drain and rinse the cannellini beans.  Drain the hominy.  Seed and chop the poblano peppers.  Dice the celery and chop the onion.  Heat the olive oil over medium heat in a large skillet.  Add the onion, celery and poblano peppers to the hot olive oil.  Cook and stir until tender, about 5-10 minutes.  Add the coriander, garlic, cumin and cayenne pepper to this mixture and cook and stir about 1 minute until garlic is fragrant.  Add turkey to mixture in skillet and cook and stir until turkey is cooked through and no longer pink.  This will take about 5-7 minutes.  Add the chicken broth, cannellini beans and oregano to turkey mixture.  Cover skillet and cook for 15 minutes.  Stir the hominy and salt & pepper into the chili and continue cooking about 15 more minutes until chili is hot. 

Hominy and Bacon 

  • 3 cups yellow or white hominy2 Tbsp butter or margarine 
  • ½ lb. sliced bacon1 small onion, chopped 
  • 1 small green pepper, chopped1 tsp salt 
  • 2 cups canned tomatoes1 Tbsp sugar 

Preheat oven to 325 degrees F. Spray a shallow baking dish with cooking spray.  Drain the hominy and place the drained hominy in the bottom of the shallow dish.  Melt the butter in a skillet and sauté the onion and green pepper until soft.  Add the tomatoes, sugar and salt to the onion and green pepper and let this mixture simmer for 10 minutes.  Pour this cooked mixture over the hominy.  Arrange the sliced bacon on top of the other ingredients. Bake in preheated oven for 30 minutes or until bacon is crisp and brown. 

Roasted Hominy 

  • 1 15.5 oz can white hominy1 Tbsp garlic powder 
  • 1 Tbsp oregano1 Tbsp vegetable oil 

Drain and rinse the hominy.  Pat dry with paper towel. Place hominy in mixing bowl.   Preheat oven to 400 degrees F.  Line a baking sheet with aluminum foil.  Spray foil with cooking spray.  Sprinkle the garlic powder and oregano over the hominy in the mixing bowl.  Drizzle the vegetable oil over this mixture and toss until evenly coated.  Place seasoned hominy on prepared baking sheet in a single layer.  Bake in preheated oven until hominy is crisp and dry, 40-50 minutes.  Stir this mixture every 10 minutes while it is baking.  Cool to room temperature before serving.
