Lemon Pie Bars, Carmel Apple Bars, Peanut Butter Bars

Lemon Pie Bars

  • 2 cups flour
  • 4 Tbsp. flour
  • ½ cup confectioners’ sugar
  • 1 cup butter or margarine, softened
  • 4 eggs
  • 1 ½ cups sugar
  • ½ cup lemon juice
  • 1 Tbsp. lemon zest

Preheat oven to 350 degrees F. Mix 2 cups of the flour with the confectioners’ sugar. Cut in the butter or margarine and mix well. You want the dough to resemble pie dough consistency. Press the dough into the bottom of a 9×13 ungreased baking pan. Bake in preheated oven until golden brown, 15-20 minutes. Beat the eggs, sugar, the remaining 4 tablespoons of flour, lemon juice and lemon zest for about 1 minute and then pour this mixture over the baked crust. Return baking pan to oven and bake the bars for an additional 20 minutes, or until the lemon topping has set. Sprinkle bars with additional confectioners’ sugar when cooled.

Caramel Apple Bars

  • 4 ½ cups chopped apples, peeled and cored
  • 1 ½ cups quick cooking oats
  • 1 14 oz. package individually wrapped caramels
  • 1 cup brown sugar, packed
  • ½ cup butter or margarine
  • ¼ cup shortening
  • 1 ¾ cups flour
  • 1 teas. salt
  • ½ teas. baking soda
  • 1 Tbsp. lemon juice
  • 3 Tbsp. flour

Preheat oven to 400 degrees F. In a large bowl cream the brown sugar, butter or margarine, and shortening until smooth. In another bowl combine 1 ¾ cups flour, oats, baking soda and salt. Stir these dry ingredients into the sugar mixture until well blended. Remove 2 cups of this mixture and set aside. Press the remaining mixture into the bottom of an ungreased 9×13 baking pan. In a bowl toss the apples with the lemon juice and then add the 3 tablespoons of flour and toss.

Spread the apple mixture evenly over the prepared crust. Remove the wrappers from the caramels. Melt the caramels in a small saucepan over medium heat. Be sure to stir frequently until the caramels are smooth. Pour the melted caramels over the apples. Sprinkle the 2 cups of reserved mixture over the top of the apple layer and press down lightly. Bake in preheated oven for 25-30 minutes until the top is golden and the apples are tender. Cut into bars while slightly warm. Store leftover bars in refrigerator.

Peanut Butter Bars

  • 1 ½ cups semi-sweet chocolate chips
  • 4 Tbsp. peanut butter
  • 2 cups graham cracker crumbs
  • 1 cup peanut butter
  • 1 cup melted butter or margarine
  • 2 cups confectioners’ sugar

Mix together the butter or margarine, graham cracker crumbs, confectioners’ sugar and 1 cup peanut butter until well blended. Press this mixture evenly into the bottom of an ungreased 9×13 pan. In a double boiler over simmering water, or in the microwave, melt the chocolate chips with the 4 tablespoons of peanut butter, stirring occasionally, until smooth. Spread this chocolate-peanut butter mixture over the prepared crust. Refrigerate for at least one hour before cutting into squares.
