Lobster Newburg, Seafood Casserole, Imperial Crab, Oyster Tetrazzini 

Lobster Newburg 

2 cups cooked lobster meat2 cups milk 

1 teas paprika3 Tbsp flour 

½ teas salt¼ teas seafood seasoning 

¼ cup butter2 Tbsp. sherry 

In a double boiler heat milk to simmer.  Add the salt, seafood seasoning and the paprika.  In saucepan melt the butter, gradually add the flour and stir constantly until smooth.  Add flour and butter mixture to the milk in the double boiler and stir until smooth and thick.  Add the lobster meat and heat.  Add the sherry just before serving or serve the sherry on the side to be added by those who want it.  Lobster Newburg is often served over either toast points or rice. 

Seafood Casserole 

1 lb. lump crabmeat1 ½ lbs. uncooked shrimp 

1 can condensed cream of mushroom soup¼ cup light cream 

2 Tbsp sherry1 cup Swiss cheese, grated 

1 cup crushed potato chips¼ cup butter or margarine 

Remove shells from shrimp and devein. Preheat oven to 375 degrees F.  Spray 1 ½ quart casserole dish with cooking spray.   In a 2-quart saucepan over low heat combine the soup, cream, crabmeat and shrimp.  Cook for approximately 5 minutes, stirring constantly.  Add the cheese and sherry to the saucepan and continue cooking and constantly stirring until cheese melts.  Pour this mixture into prepared casserole dish.  Top with crushed potato chips.  Dot with butter or margarine.  Bake in preheated oven for 15 – 20 minutes. 

Imperial Crab 

1 lb. lump or back fin crab meat½ green pepper, diced 

1 small pimiento, diced1 egg, beaten lightly 

1/3 cup mayonnaise¼ teas salt 

½ teas pepper1 additional Tbsp mayonnaise 

1 additional egg lightly beaten 

Preheat oven to 350 degrees F.  Gently pick over crab meat to be sure there are no shells.  Gently combine all ingredients except one beaten and the 1 tablespoon of mayonnaise.  Spray either 6 baking shells or 6 baking cups,5 ounces each, with cooking spray. Divide the imperial crab mixture among the individual shells or baking cups.  In small bowl mix the second beaten egg with the remaining 1 tablespoon of mayonnaise.  Spoon this mayonnaise-egg mixture over each imperial crab.  Bake in preheated oven for 20-25 minutes or until brown.  

Oyster Tetrazzini 

1-pint oysters4 ounces spaghetti 

2 cups medium white sauce2 Tbsp prepared mustard 

¾ cup grated mild cheddar cheese2 teas paprika 

1 ½ teas parsley flakes½ cups bread crumbs 

¼ cup butter or margarine 

Cook spaghetti according to package directions and set aside. Spray 1 ½ quart casserole dish with cooking spray.  Preheat oven to 350 degrees F.  Make white sauce according to directions below.  Add the mustard and oysters into the white sauce.  Place the spaghetti in the bottom of the prepared casserole followed by a layer of the oyster white sauce and then a layer of the grated cheese.  Sprinkle some paprika and parsley flakes on each layer.  Top the casserole with the bread crumbs and dot with pieces of butter or margarine.  Bake in preheated oven for about 35 minutes/ 

Medium white sauce recipe * makes 2 cups 

4 Tbsp butter or margarine4 Tbsp flour 

2 cups milksalt & pepper to taste 

Melt butter or margarine in saucepan.  Stir in flour and salt and pepper.  Stir until mixture is smooth.  Slowly add the milk.  Cook and stir constantly over medium heat until mixture is desired thickness.
