Low Carb Recipes 

Low carb food can be delicious.  Here are a few simple to make low carb recipes you might enjoy. 

Crunchy Pecan Chicken 

4 boneless skinless chicken breasts, pound thin  

1 cup ground pecans 

¾ cup grated parmesan cheese 

½ teaspoon garlic salt 

½ teaspoon crumbled dried leaf basil 

lemon juice 

2 Tablespoons olive oil 

In one bowl place lemon juice into which you will dip chicken before coating.  Combine pecans, garlic salt, cheese and basil in another shallow bowl.  Dip chicken breast in lemon and then coat with pecan mixture. 

Heat olive oil in skillet and when oil is hot place chicken breasts in pan.  Cook 3 to 5 minutes on each side or until golden. 

Cod with Balsamic Dressing 

1-pound fresh cod fillet 

2 teaspoons olive oil 

2 teaspoons balsamic vinegar 

2 tablespoons fresh thyme 

Salt and pepper to taste 

Sprinkle cod on both sides with salt and freshly ground pepper.  Add olive oil to large skillet and heat on medium high heat.  When oil is hot place the fish in the pan, lower heat to medium and cook for 5 minutes or until the underside of the fish is brown and a crust is starting to form. 

Turn the fish over carefully, reduce heat to medium low and cover the skillet.  Cook for approximately 5 minutes or until fish flakes with a fork.  Remove fish from skillet.  Bring the heat up to medium-high, add balsamic vinegar to skillet and cook quickly, scraping the pan to get up all the scraps.  

Turn off heat, return fish to skillet and turn fish over to coat both sides with reduced vinegar.  Sprinkle with fresh thyme leaves and serve immediately. 

Note:  If you don’t like cod you can use chicken breasts for this recipe.  Cooking time will be a little longer. 

Tuna Patties 

(The carbs in this recipe are a little higher because of the breadcrumbs.  However, it is high in protein and the carbs are not too bad, 18 grams of carbs per serving.) 

Tuna Patties 

1 12-ounce can white tuna drained and finely flaked 

¾ cup seasoned panko breadcrumbs 

¼ cup green onion 

1 egg 

½ cup milk 

½ teaspoon lemon zest 

2 tablespoons oil 

Combine tuna, breadcrumbs, green onion, egg, milk and lemon zest.  Form mixture into patties, Heat oil in skillet over medium heat.  Add patties and cook until golden brown, about 3 minutes per side. 

Steak Diane 

2 boneless beef top loin steaks about 1 inch thick (about 1 ¼ pounds)  

1 teaspoon grated lemon peel 

¼ teaspoon pepper 

1 tablespoon oil 

2 tablespoons brandy (optional) 

2 teaspoons Worcestershire sauce 

½ pound sliced small mushrooms 

3 tablespoons finely chopped shallots or green onions 

¼ cup half and half 

1 tablespoon fresh lemon juice 

2 teaspoons Dijon mustard 

Heat one-half the oil in large pan over medium heat.  When hot add mushrooms and shallots or onions, cook and stir until tender about 4 minutes.   

Remove pan from heat. 

In clean pan add some cooking spray and additional oil and heat over medium heat.  Meantime combine lemon peel and pepper and press into beef steaks.  Place steaks in heated pan and cook 12 to 15 minutes for medium rare to medium, turning occasionally.  Remove steaks from pan and keep warm. 

If using brandy add to the pan where steaks were cooked and stir until browned bits attached to skillet are dissolved.  Stir in half and half, lemon juice, mustard and Worcestershire.  Stir in mushroom mixture, heat.  Serve sauce with steak. 

Oysters Casino 

24 oysters on the half shell 

12 slices bacon 

1/2 cup butter 

1/3 cup chopped green peppers 

2 tablespoons chopped chives 

4 tablespoons chopped parsley 

Juice of a lemon 

Cook bacon until transparent.  Remove bacon from pan. To this same pan add green peppers and cook until peppers are tender.  Add butter, chives and parsley and cook for few minutes.  Top each oyster with mixture from pan plus ½ slice bacon and a few drops of lemon juice. 

Bake at 450 degrees until bacon is crisp.  Remove from oven, plate and enjoy.
