Parmesan Garlic Mashed Cauliflower

Mashed Cauliflower

6 cups cauliflower florets

1 ½ qt. water

1 clove garlic, minced, optional

1/3 cup light mayonnaise

¼ teas. salt

Place the water in a large pot and bring the water to a boil.  Add the cauliflower and garlic and salt to the boiling water and boil until the cauliflower is soft, 15-20 minutes.  Drain the cauliflower.  Add the mayonnaise to the cauliflower and use either a regular blender or an immersion blender to puree the cauliflower mixture until creamy,

Loaded Baked Mashed Cauliflower

6 cups cauliflower florets

4 slices center cut bacon

3 cloves garlic, crushed

1/3 cup 1% buttermilk

2 Tbsp. chives, minced

1 Tbsp. whipped butter or margarine

¼ cup reduced fat shredded cheddar cheese

salt and pepper to taste

Preheat oven to 350 degrees F.  Spray an 8×8 baking dish with cooking spray.  Place a medium skillet over medium-high heat and place the bacon in the skillet.  Cook the bacon until it is crisp and then remove the bacon with a slotted spoon and drain the bacon on a paper towel.  Crumble the bacon.  Fill a large pot with water and bring the water to a boil.  Add the cauliflower and garlic to the boiling water and boil until the cauliflower is soft, 15-20 minutes.  Drain the cauliflower and garlic and return the cauliflower and garlic to the same pot.  Add the butter or margarine, buttermilk, salt and pepper and puree until creamy using an immersion blender.  You can use a regular blender if you do not have the immersion blender.  Mix 1 tablespoon of the chives into the mashed cauliflower and spoon the cauliflower into the prepared baking dish.  Top the mashed cauliflower with the cheddar cheese and crumbled bacon. Place baking dish in preheated oven and bake for about 5 minutes until the cheese melts.   Remove baking dish from oven, top casserole with remaining chives.

Parmesan Garlic Mashed Cauliflower

6 cups cauliflower florets (florets from 1 head cauliflower)

1 clove garlic, smashed

1 Tbsp. olive oil

½ cup grated parmesan cheese

1 Tbsp. reduced fat cream cheese

salt and pepper to taste

Place a steamer insert into a saucepan and fill the bottom of the saucepan to just below the bottom of the steamer.  Bring the water to a boil.  Add the cauliflower to the steamer basket, cover the saucepan and steam the cauliflower until it is tender, about 10 minutes.  While the cauliflower is steaming place a small skillet over medium heat.  Add the olive oil to the skillet and when the oil is hot add the garlic and cook and stir until the garlic is softened, about 2 minutes.  Remove skillet from heat.  Transfer half the cauliflower to a food processor, cover and blend on high.  Add the remaining cauliflower one floret at a time to the blender and continue processing until the cauliflower is creamy.  Stir in the parmesan cheese, garlic and cream cheese.  Season to taste with salt and pepper.
