Meatloaf Recipes 

There are lots of meatloaf recipes, some are fancy and other are plain.  Here is a sampling of some meatloaf recipes. 

Basic Meatloaf 

  • 1 ½ lb. ground beef
  • 1/4 teas salt 
  • ¼ cup uncooked quick oats
  • 1 1/2 teas pepper 
  • 2 eggs, beaten
  • 1 cup tomato sauce* 
  • ¼ c chopped onion 

*Note: If you use tomato sauce that is seasoned, such as with chilies, it will spice up your meatloaf.  Keep a little of the tomato sauce to spoon over the top of the meatloaf before baking. 

Heat oven to 350 degrees.  Mix all ingredients together and form into the shape of a loaf.  Place  

meatloaf into either a metal or glass pan and bake for approximately 1 hour. 

Oriental Meatloaf 

  • 1 ½ lb. ground beef
  • 1 egg, beaten 
  • 1 cup bread crumbs
  • 1 small onion, chopped 
  • 2 cloves minced garlic
  • 1 tsp minced ginger root 
  • 1 tsp pepper
  • 1 cup catsup 
  • 1 tsp salt
  • 1 Tbsp Worcestershire sauce 
  • 1 cup soy sauce
  • 2 Tbsp water 

Heat oven to 350 degrees.   Mix all ingredients together and form into a loaf.  Place meatloaf in either a metal or glass dish.  Tent meatloaf loosely with foil.  Bake 45-55 minutes. 

Meatloaf and mushrooms 

  • 1 ½ lb. ground beef
  • 4 oz chopped mushrooms 
  • 1 egg, beaten
  • ¼ cup bread crumbs 
  • ¼ cup onion, minced
  • 2 Tbsp steak sauce 
  • 1 ½ teas salt
  • 1 cup herb seasoned croutons 

Heat oven to 350 degrees.  In mixing bowl, mix together everything except mushrooms and croutons.  Spread a piece of plastic wrap on counter.  Place mixed meatloaf on plastic wrap and pat into a rectangle.  In the center of the meatloaf make a row of the mushrooms and croutons.  Use the plastic wrap to lift the meatloaf mixture and form into a loaf.  Place meatloaf in either a metal or glass pan and bake for 1 hour. 

Barbeque Meatloaf 

  • 2 lbs. ground beef
  • 1 cup bread crumbs 
  • ½ cup milk
  • 2 Tbsp minced onion 
  • 1 ½ teas salt
  • 1 egg, beaten 
  • ½ cup Barbeque Sauce (use whatever kind is the family favorite) – Divide bbq sauce into 2 portions. 

Heat oven to 350 degrees.  Mix all the ingredients, but only include ¼ cup of the barbeque sauce, and form into a loaf.  Place meatloaf in either a metal or glass pan.  Mix remaining ¼ cup barbeque sauce with ¼ cup water and pour over meatloaf.  Bake for 1 hour. 

Meatloaf Stuffed with Cheese 

  • 2 lbs. ground beef
  • 1 ½ teas salt 
  • ¾ cup bread crumbs
  • 2 teas black pepper 
  • ½ cup minced onion
  • 2 ½ cups shredded cheese, either Cheddar or 
  • 2 eggs, beaten
  • Mexican Blend shredded cheese 

Heat oven to 350 degrees.  Mix all ingredients, except cheese, together.  Place plastic wrap on counter.  Place meatloaf mixture on plastic wrap and pat into a rectangle.  Spread cheese in the center of the meatloaf mixture.  Use the plastic wrap to roll the meatloaf mixture into a loaf.  Place loaf in either a metal or glass pan and bake for 1 hour. 

Meatloaf stuffed with egg 

  • 2 lb. ground beef
  • 1 egg beaten 
  • 3 Tbsp bread crumbs
  • 3 Tbsp grated Parmesan cheese 
  • 2 hard boiled eggs, peeled
  • 3 thin slices ham  
  • 3 thin slices Provolone cheese
  • salt and pepper to taste 

Heat oven to 350 degrees.  Mix all ingredients except hard boiled eggs, ham and Provolone cheese together. Place plastic wrap on counter.  Place meatloaf mixture on plastic wrap and pat into a rectangle. Place the ham. Provolone cheese and hardboiled eggs in a row down the center of the meatloaf mixture.  Use the plastic wrap to lift the meatloaf and form into a loaf.  Place into either a metal or glass pan and bake for about 50 minutes. 

Note; You can eliminate both the ham and Provolone cheese if you wish and just use the hard-boiled eggs to stuff the meatloaf.
