Mocha Oatmeal, Whole Wheat Pancakes, Buttermilk Scones with Raisins

Mocha Oatmeal

  • 1 cup brewed coffee
  • ½ cup oatmeal
  • ½ Tbsp. unsweetened cocoa powder
  • 1 packet Splenda or another sweetener

Use the 1 cup of brewed coffee just as you would use water when making oatmeal. You can cook your oatmeal in the microwave or on the stovetop. If you are using quick oatmeal, then you can add hot coffee to the oatmeal and let it sit. Stir in the cocoa powder and the sweetener. Whole Wheat Pancakes

  • 2 egg whites
  • 1/3 cup all-purpose flour
  • 2/3 cup whole wheat flour
  • ¾ cup fat-free milk
  • 1 Tbsp. brown sugar
  • ¼ cup applesauce
  • ¼ teas. salt
  • 3 teas. baking powder

Spray a griddle with cooking spray and pre-heat the griddle. Griddle is hot when a drop of two of water dances across it. Mix all the ingredients in a mixing bowl. Using a ¼ cup measuring cup pour the batter onto the hot griddle. When the pancakes start to have air bubbles popping it is time to turn the pancake over. Turn the pancake over only once. Any leftover pancakes may be frozen. Recipe makes 10 pancakes (5 servings of 2 pancakes each) Estimated WW Smart points 3 per serving.

Buttermilk Scones with Raisins

  • ¾ cup low-fat buttermilk
  • 5 Tbsp unsalted butter
  • 1 teas. salt
  • ½ cup raisins
  • 2 teas. baking powder
  • ½ teas. baking soda
  • 1 teas. sugar
  • 1 ¾ cups flour

Preheat oven to 450 degrees F. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda and salt and mix will. Using two knives or a pastry cutter cut the butter into the dry mixture until the mixture resembles coarse meal. Stir in the raisins. Blend the buttermilk into this mixture until the mixture forms a soft dough. On a floured surface, roll the dough to a thickness of ½-inch. Use a sharp knife to cut the dough into six squares. Cut each of these squares again on the diagonal. Place the triangles onto an ungreased baking sheet. Place baking sheet into preheated oven and bake the scones until they are golden brown, about 10-12 minutes.Recipe makes 12 servings, 1 scone each Estimated WW Smart points 5 per serving.
