Pepper Steak, Swiss Steak, Baked Steak, Steak Salad 

Pepper Steak 

1 ½ lbs. round steak1 cup onion, chopped 

2 medium green peppers1 cup sliced mushrooms 

2 cloves garlic, minced1/3 cup soy sauce 

1/3 cup honey1/3 cup red wine vinegar 

¼ cup oil 

Slice round steak into thin strips.  Slice green peppers into strips.  In large skillet over medium heat add the oil and when oil is hot, add the onion, pepper, mushrooms and garlic.  Stir fry for about 2 minutes.  Remove this mixture from skillet and set aside.  Increase the heat for this same skillet to medium-high and add the soy sauce, red wine vinegar and honey.  Stir to combine and then add the sliced beef strips.  Cook until the beef is done, approximately 10-15 minutes, stirring frequently.  Stir in the vegetable mixture and continue cooking for another 10-15 minutes.  Pepper steak is usually served over rice.   

Swiss Steak 

2 lbs. round steak2 Tbsp oil 

1 16oz can diced tomatoes1 cup diced onion 

1 cup sliced mushrooms½ cup diced green pepper 

¼ cup flour1 teas Worcestershire sauce 

Salt & pepper to taste 

Combine the flour, salt and pepper and press this into both sides of the steak. Heat oil over medium heat in a large heavy skillet or Dutch oven.  Place steak in hot oil and brown on all sides.  Remove steak and set aside.  Add the onion to the pan and cook over medium-low heat until just tender, about 3 minutes.  Return steak to pan and add the mushrooms, peppers, Worcestershire sauce, and tomatoes.  Cover pan and simmer for 1 ½ – 2 hours, until meat is fork tender. 

Baked Steak 

2 lbs. round stead1 cup sliced mushrooms 

1 medium onion½ green pepper 

½ yellow or red pepper½ cup black coffee 

1 cup catsup 

Slice onion into rings.  Slice green and yellow peppers into rings. Slice round steak into pieces about ½ to ¾ inches thick.  Preheat oven to 350 degrees F.  Spray a baking dish with cooking spray. Place the round steak in the prepared baking dish and top with the onion, pepper rings and mushrooms.  In small bowl combine the coffee and catsup and pour this liquid mixture over the meat and vegetables.  Cover the dish and bake in preheated oven for approximately 1 hour, or until tender.  Uncover baking dish and continue baking an additional 15 minutes.  Serve over rice or with mashed potatoes. 

Steak Salad 

1 lb. top round steak, thinly sliced6 cups romaine lettuce 

½ cup bleu cheese, crumbled1 tomato, sliced 

½ cup sweet onion, sliced1 clove garlic minced 

1 small green pepper, sliced¼ cup olive oil 

2 Tbsp red wine vinegar1 Tbsp lemon juice 

1 teas Worcestershire saucesalt & pepper to taste 

Wash lettuce, pat dry and tear into pieces.  Spray a large skillet with cooking spray and heat over medium heat.  Add the steak to the hot skillet and cook until desired doneness.   In a small bowl combine the olive oil, vinegar, lemon juice, garlic, salt & pepper and Worcestershire sauce and whisk together.  Mix the bleu cheese into this dressing.   In large serving bowl, toss together the lettuce the tomato, pepper and onion.  Top with the steak. Drizzle the dressing over the steak salad.
