Pineapple Pecan Breakfast Muffins

  • ¾ cup crushed pineapple canned in juice, drained
  • 1/3 cup chopped pecans
  • 1 cup flour
  • ¾ cup quick oats
  • 1/3 cup wheat bran
  • 2/3 cup brown sugar twin
  • 2 teas. baking powder
  • 1 teas. ground cinnamon
  • 3 Tbsp. canola oil
  • 1 cup fat-free milk
  • 1 egg
  • 2 teas. vanilla extract

Preheat oven to 350 degrees F. Line one 12 cup muffin tin or two 6 cup muffin tins with paper cup liners. Combine the flour, oats, wheat bran, baking powder, brown sugar twin, and cinnamon in a large mixing bowl and stir well. Add the crushed pineapple, milk, canola oil, egg and vanilla to the dry ingredients and mix until just blended. Spoon the muffin batter into the prepared muffin tins. Place the muffin tins in the preheated oven and bake for about 20 minutes or until a toothpick inserted into the center comes out clean.

Breakfast Cookies

  • 2 cups oats
  • 4 medium very ripe bananas, peeled
  • ¼ cup chopped dates
  • ¼ cup sunflower seeds
  • ¾ teas. baking soda
  • 1 teas. cinnamon, or more to taste

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and spray the paper with cooking spray. Use a blender to blend the oats into fine flour. Pour the oat flour into a mixing bowl and add the baking soda and cinnamon. Place the bananas into the blender and blend until completely smooth. Add the bananas to the oat mixture together with the dates and sunflower seeds and mix well. Use a spoon to drop the batter onto the prepared baking sheet so that you have 12 cookies. Place baking sheet in preheated oven and bake for about 12 minutes. Cool cookies on a wire race. Store cookies in the refrigerator in an airtight container.

Granola-Raisin Breakfast Bars

  • 2 ¼ cups old fashioned oats
  • ½ cup whole wheat flour
  • 5 Tbsp. unsweetened applesauce
  • ½ cup raisins
  • ½ teas. baking soda
  • ½ teas. vanilla extract
  • ¼ cup honey
  • ¼ cup brown sugar twin

Preheat oven to 325 degrees F. Spray an 8×8 baking pan with cooking spray. Combine the oats, flour, applesauce, raisins, baking soda, honey, vanilla, and sugar twin in a mixing bowl and mix well. Press this batter into the prepared baking pan. Place the baking pan in the preheated oven and bake for 18-22 minutes or until the bars are golden brown. Remove the pan from the oven and allow the bars to cool for 10 minutes and then cut into 9 bars. Allow the bars to cool completely before serving.
