Blue Cheese Steak Wrap

Pizza Meatloaf

1 ½ lb. extra lean (95%) ground beef

20 pepperoni slices, diced

½ cup green peppers, diced

½ cup onions, diced

½ cup panko breadcrumbs

2 teas. Italian seasoning

1/3 cup pizza sauce

1/3 cup shredded reduced fat mozzarella cheese

¼ cup shredded reduced fat mozzarella cheese, for topping

2 Tbsp. pizza sauce, for topping

15 pepperoni slices, for topping

Dash or two of Italian seasoning, or to taste, for topping

Preheat oven to 350 degrees F.  Spray a baking pan with cooking spray.  (Be sure your baking pan has a rim since there will be grease from the beef as it cooks)  In a large mixing bowl combine the ground beef, diced pepperoni,  green peppers, onion, breadcrumbs, one-third cup of the mozzarella cheese , one-third cup pizza sauce and 2 teaspoons of Italian seasonings.  Use your hands to shape these ingredients into a loaf and place the loaf in the prepared baking pan.  Place the baking pan in the preheated oven and bake the meatloaf for 55 minutes.  Remove the meatloaf from the oven and spoon 2 tablespoons of the pizza sauce on top.  Season with Italian seasoning and then add the ¼ cup of mozzarella cheese and the pepperoni slices.  Return meatloaf to the oven and bake for an additional 10-15 minutes.  Remove meatloaf from oven, tent with foil, and allow meatloaf to rest for 5 minutes.  Slice meatloaf into 8 slices.

Blue Cheese Steak Wrap

6 oz. flank steak, trimmed and cut into thin strips

1 oz. crumbled blue cheese

2 light flatbreads

4 grape or cherry tomatoes, sliced

3-4 lettuce leaves, torn

2 teas. Cajun seasoning

1 teas. olive oil

2 Tbsp. light balsamic vinaigrette dressing

Place the steak strips in a plastic bag with the Cajun seasoning.  Shake the bag to coat the steak strips with the seasoning.  Heat the oil in a medium size skillet over medium heat.  Add the seasoned steak strips to the hot oil and cook the steak strips in a single layer in the oil for 3-5 minutes, until the steak strips reach desired doneness.  Turn the steak strips over occasionally.  When steak strips are done remove to a plate.  Lay the flatbreads on a flat surface and place lettuce in the center of each flatbread.  Start at the rounded end of the flatbread and spread the lettuce down the length of the flatbread to the other rounded end.  Leave a little bit of space at each end since you will be folding the flatbreads over.  Divide the steak evenly between the two flatbreads and place the steak strips on top of the lettuce.  Divide the tomatoes and blue cheese between the two flatbreads and top the steak strips with the tomatoes and blue cheese.  Drizzle balsamic vinaigrette dressing over the steak strips, tomato, blue cheese and lettuce.  Fold the rounded ends of each flatbread in over the filling.  Then fold one of the long edges over the filling and continue to roll the flatbread until it is completely rolled up.  Cut the wrap in half and serve.
