Poached Pears with Yogurt, Grilled Pineapple, Baked Apples with OatsGrapes with Yogurt

Poached Pears with Yogurt

  • 2 pears
  • 1 5.3 oz. container vanilla yogurt
  • ¾ cup apple juice
  • ½ cup pomegranate juice
  • 1 strip of orange rind
  • 1 cinnamon stick

Peel the pears, core and cut into halves. Bring the apple juice, pomegranate juice, orange rind and cinnamon stick to a boil in a small saucepan over medium-high heat. Place the pears face down in the pan. Lower the heat and simmer until a knife can be easily inserted into the centers of the pears, about 15-20 minutes. As they are cooking spoon the sauce over the pears occasionally. Remove the pears from the heat when they are tender and allow the pears to cool. Remove the orange rind and discard. Reduce the remaining liquid in the saucepan to a glaze by cooking over medium-low heat for about 7-8 minutes. Pour the glaze over the pears and refrigerate until serving time. To serve, place ½ pear on each plate and top with a scoop of yogurt. Recipe makes 4 servings Estimated WW Smart points 2 per serving.

Grilled Pineapple

  • 8 pineapple slices, ½ inch thick
  • 2 Tbsp. honey
  • 1 teas. olive oil
  • 1 Tbsp. lime juice
  • 1 teas. ground cinnamon

Combine the honey, olive oil, lime juice and cinnamon in a small bowl and whisk to blend. Set aside. Spray a grill or grill pan with cooking spray. Brush the pineapple slices with the honey mixture. Place the pineapple on the grill and grill for about 3-4 minutes per slice. Turn the slices once. Baste the slices once or twice while they are cooking with more of the honey mixture. Baked Apples with Oats

  • 2 large apples
  • 2 Tbsp, melted butter
  • 2 Tbsp. brown sugar
  • 2 Tbsp. flour
  • 4 Tbsp. quick oats
  • Dash of cinnamon

Preheat oven to 350 degrees F. Wash the apples, cut them in half and remove the core and seeds. Combine the melted butter, brown sugar, flour, oats and cinnamon in a small bowl. Spoon this mixture on top of the apple halves and sprinkle the apple halves with cinnamon. Place apples on a baking sheet, place in preheated oven and bake for about 30 minutes. Serve apples warm. Grapes with yogurt

  • 1 lb. seedless green grapes
  • 1 lb. seedless red grapes
  • 8 oz. fat free plain yogurt
  • 4 oz. softened light cream cheese
  • ¼ cup sugar
  • 1 teas. vanilla extract

Topping:

  • 2 Tbsp. packed brown sugar
  • ½ cup chopped walnuts

Wash the grapes and dry them well. Cut the grapes in half and set aside. Mix the yogurt, cream cheese, sugar and vanilla well. Stir the grapes into the yogurt mixture. Transfer the grapes and yogurt to a serving bowl. Combine the brown sugar and walnuts and sprinkle this over the grapes and yogurt in the bowl. Refrigerate before serving.
