Popovers, Hush Puppies, Beer Bread, Raisin Bread, Oatmeal Bread

Popovers

  • 2 eggs
  • 1 cup sifted flour
  • 1 cup milk
  • ½ teas. salt
  • 1 Tbsp. vegetable oil

Grease 6-8 custard cups very well. Preheat oven to 425 degrees F. Place the eggs, milk, salt and sifted flour in a mixing bowl. Beat these ingredients with an electric mixer on high speed for 1 ½ minutes. Add the oil and beat the batter for an additional 30 seconds. Pour batter into prepared custard cups. Fill each cup about one-half full. Place custard cups in preheated o oven and bake for 30 minutes. Remove custard cups from oven and prick each popover with a fork to release the steam. Return the popovers to the oven and bake for an additional 5 minutes.

Hush Puppies

  • 1 cup white cornmeal
  • 1 beaten egg
  • 2 Tbsp, flour
  • ½ teas. salt
  • 2/3 cup milk
  • 3 Tbsp. minced onion
  • 1 teas. baking powder
  • 1 teas. sugar
  • Oil for frying

Combine the cornmeal, flour, salt, baking powder in a mixing bowl. In another bowl beat the egg and milk together. Add the egg and milk mixture to the dry ingredients and stir until smooth. Stir in the minced onion. Heat oil in a deep pan until it reaches 375 degrees F. Using a teaspoon, drop the batter into the deep hot fat and fry until golden brown. Drain on paper towels. Stir the batter between the batches you are frying. Serve hot.

Beer Bread

  • 1 12 oz. can of beer
  • 1 cup self-rising flour
  • 2 Tbsp. sugar

Have the beer at room temperature. Preheat oven to 400 degrees F. Grease and flour a 9 x 5 loaf pan. Sift the flour and sugar together in a large mixing bowl. Pour in the beer and stir until just blended. Spoon the bread batter into the prepared loaf pan and place in the preheated oven. Bake for 55–60 minutes.

Raisin Bread

  • ½ cups flour
  • 1 cup raisins, floured
  • 1/3 tsp. salt
  • 1 teas. Baking powder
  • 1 egg
  • 1 Tbsp. butter or margarine
  • 2/3 cup sugar
  • 2/3 cup milk

Grease and flour an 8 or 9-inch square baking pan Preheat oven to 350 degrees F. Sift the flour, baking powder, and salt together. Cut the butter into the flour mixture. Stir in the sugar and raisins. In another bowl beat the eggs and milk together then mix the combined egg and milk mixture with the other ingredients to form a light dough. Place dough in the baking pan, cover pan with a folded kitchen towel, and allow the dough to rest for 10-15 minutes before baking. Remove towel and place pan in preheated oven and bake for about 1 hour.

Oatmeal Bread

  • 2 cups sifted flour
  • 2 cups rolled oats
  • ½ cup molasses
  • 1 2/3 cup milk
  • 1 cup seedless raisins
  • 1 ½ teas. salt
  • 4 teas. baking powder
  • 1/3 cup sugar
  • 4 teas. shortening

Grease and flour a 9 x5 x2 loaf pan. Soak the raisins in water for a few minutes and then drain. Sift together the flour, baking powder, salt and sugar in a mixing bowl. Cut the shortening into the dry mixture until it is blended. Mix the raisins and oats together in another bowl. Add the raisins and oats to the flour mixture. Stir in the milk and molasses until all ingredients are blended. Pour batter into prepared pan. Cover pan with a folded kitchen towel and allow the pan to stand for about 20 minutes before baking. Preheat oven to 350 degrees F. Remove towel from pan and place pan in oven and bake for 1 hour. Remove bread from pan and allow it to cool on a rack.
