Recipes For The Chocolate Lover 

 

If you love chocolate, here are a few recipes you may want to try. 

Chocolate Cheesecake 

  • 1 ¼ cups graham cracker crumbs2 tablespoons sugar 
  • 2 tablespoons butter or margarine, melted2 pounds cream cheese, softened 
  • 1 cup sugar8 ounces sour cream 
  • ¼ cup cocoa2 eggs 
  • 1 cup flour¾ cup heavy whipping cream 

Place cream cheese and 1 cup sugar in large mixing bowl.  Mix on low speed until mixture is smooth. Add sour cream and continue mixing until well blended.  Add eggs, mix for 2 minutes and then add flour, cocoa and heavy whipping cream.  Mix until batter is smooth and creamy.  Consistency of batter should resemble ice cream as it comes from ice cream machine. 

In another large bowl combine graham cracker crumbs and 2 tablespoons sugar and your melted butter or margarine.  Whisk together with wire whisk until well combined. 

Now take a 10-inch x 2-inch spring form and brush its sides with some softened butter so the crumbs will have something to hold to.  Place the crumbs on the bottom and sides of the pan.  After placing crumbs in pan, slowly add the cheesecake mixture.  You want to avoid disturbing the graham cracker crumbs as much as possible.  Your pan should now be full. 

Preheat your oven to 275 degrees, no higher.  When oven is hot place cake in oven and bake for 55 minutes.  Shut off the oven and let the cake remain in the oven for 3 hours.  Remove the cake from the oven and allow it to cool at room temperature for 1 ½ hours.  Finally, place cake in refrigerator for about 2-3 hours.  After this time, you can remove the cake from the pan since it is now ready to enjoy. 

Easy Chocolate Chip Cookies 

  • 1 package butter pecan, chocolate chip, chocolate fudge, devil’s food, German chocolate or yellow cake mix 
  • ½ cup softened butter or margarine1 teaspoon vanilla 
  • 2 eggs½ cup chopped nuts 
  • 1 cup (6 oz package) semi-sweet chocolate chips 

Heat oven to 350 degrees. Place ½ the dry cake mix in large bowl and add butter, vanilla and eggs and mix until smooth.  Stir in remaining cake mix, nuts and chocolate chips. 

Drop dough by rounded teaspoons onto ungreased cookie sheet.  Place each spoonful of dough about 2 inches apart.  Bake 10 to 12 minutes until edges are set (center will be soft).  Cool 1 minute, remove from cookie sheet and cool on wire rack. 

Chocolate Fondue 

  • 12 ounces premium dark chocolate, chopped 
  • 3/4 cup whipping cream 
  • 2 teaspoons Kahlua or other coffee liqueur (optional) 
  • Heat whipping cream over low heat (Do Not Boil!) 

Slowly add chopped dark chocolate while stirring.  Stir until mixture is smooth.  Add liquor, if desired. 

You will want to have one or more of the following items ready for dipping into the fondue:  Bananas, strawberries, sliced apple, cubes of pound cake, cubes of angel food cake, pretzel sticks, pineapple chunks, candied fruit, pears, peach slices or marshmallows. 

Easy No Bake Yummy Chocolate Pie 

  • 1 jar (11.75 oz) hot fudge sauce1 chocolate cookie crumb pie crust 
  • 5 Hostess Cupcakes1 cup heavy whipping cream 
  • 1 tablespoon 10X sugar1 package instant chocolate pudding mix 
  • 1 ½ cups milk 

Remove lid and heat hot fudge sauce in microwave on high for 20 to 30 seconds.   Spoon ½ of this sauce into bottom of pie shell. 

Cut cupcakes in half vertically.  Arrange in pie crust with filling facing edge of crust.  Continue in circles to cover pie crust. 

Beat cream until soft peaks form, add sugar and beat until stiff peaks form.  Whisk pudding mix and milk until thickened.  Fold ¾ cup of whipped cream into the pudding.  Spoon pudding mixture over cupcakes in pie shell.  Top pie with remaining whipped cream.  Refrigerate until pie is set and ready for serving.
