Recipes Using Rotisserie Chicken

A quick and easy way to prepare a meal is to use a rotisserie chicken from the deli. There area any number of ways you can use shredded chicken to make a delicious meal. Simply take the pieces of the chicken apart, remove the skin and then take the chicken from the bone. Use two forks to shred the chicken. You want to shred the rotis serie chicken while it is warm so it will shred easily.

Southwestern Chicken Soup

  • 2 cups shredded rotisserie chicken
  • 4 cups chicken broth
  • 1 teas. minced garlic
  • 1 teas. chili powder
  • ½ teas cumin
  • 1 15 oz can pumpkin
  • 1 15 oz can black beans
  • 1 can corn
  • 1 ½ cups salsa

Drain the corn. Drain the black beans and rinse well. In a large saucepan or stock pot, over medium heat, mix together the garlic, chili powder and cumin with ½ cup of the broth and stir well. Add the remaining broth to this mix and simmer for 5 minutes. Stir the pumpkin into the broth and spices. Add the corn, black beans, salsa and chicken to the pot. Bring the soup to a boil, reduce heat to low and simmer for 10 minutes.

Chicken Lettuce Wraps

  • 2 cups shredded rotisserie chicken
  • ½ cup nonfat plain Greek yogurt
  • 1 cup diced celery
  • 1 small onion, diced
  • 1 ¼ teas. curry powder
  • 8 large lettuce leaves
  • Salt and pepper to taste

Rinse the lettuce leaves and pat dry. In a large mixing bowl combine the chicken, yogurt, celery, onion, curry powder and salt and pepper and mix well. Place the lettuce leaves on the counter and scoop an equal amount of the chicken salad onto each lettuce leaf. Roll the lettuce leaves into a wrap. Place the rolled lettuce leaves seam side down to help keep the wrap together. Serve the chicken lettuce wrap chilled.

Barbeque Chicken Pizza

  • 1 Naan flatbread
  • ¾ cup shredded rotisserie chicken
  • ½ cup barbeque sauce
  • ½ cup shredded mozzarella cheese

Preheat oven to 425 degrees F. Spread the barbeque sauce over the flatbread and top with the shredded chicken and mozzarella cheese. Place pizza in oven and bake for 8-12 minutes or until cheese is bubbly.

Buffalo Chicken Flatbreads

  • 1 cup shredded rotisserie chicken
  • 1/3 cup plain Greek yogurt
  • 1 cup diced onion
  • 1 stalk diced celery
  • ½ cup whipped cream cheese
  • 1 ½ cup shredded cheddar cheese
  • ¼ cup buffalo sauce
  • 1 Tbsp. buffalo sauce
  • 4 flatbreads

Preheat oven to 400 degrees F. In a mixing bowl combine the shredded chicken, diced onion, the diced celery and ¼ cup of the buffalo sauce and mix well. Set aside. Place flatbreads in preheated oven and heat for 2 minutes. Remove flatbreads from oven and spread with the cream cheese. Spread the buffalo chicken mixture over the cream cheese and top with the shredded cheddar cheese. Place flatbreads in oven and bake for 5 minutes or until golden brown. While the flatbreads are cooking, combine the Greek yogurt with the remaining 1 Tbsp. of the buffalo sauce. Set aside. Remove the flatbreads from the oven and spoon the yogurt buffalo sauce mixture over the top of the flatbreads.
