Roast Beef, Onion and Swiss Sandwich, Prosciutto and Arugula Sandwich, Tuna Melt, Chicken Club Lettuce Wrap

Roast Beef, Onion and Swiss Sandwich

  • 12 oz.roast beef, sliced thin(leftover roast beef works well)
  • 8 oz. loaf French or Italian bread
  • 4 oz.reduced fat Swiss cheese
  • 1 large onion
  • 2 teas. olive oil
  • salt and pepper to taste

Cut the bread into 4 pieces. Slice the onion into thin rings.Place a skilletover medium-lowheat. Add the oil and onions to the skillet and season with salt and pepper.Cook the onionsfor about 15 minutes oruntil theyare slightly brown, turn occasionally. Slice the bread on theside to open it for a sandwich. Place 3 ounces of the leftover roast beef on each piece and topthe roast beef with one-quarter of the cooked onions. Top each sandwich with 1 ounce of thecheese. Place the sandwich under the broiler for 1-2 minutes to let the cheese, be careful notto burn the sandwich.Recipe makes 4 servings, 1 sandwich each Estimated WW Smart points 8 per serving.

Prosciutto and Arugula Sandwich

  • 2 slices lean prosciutto
  • 1 French roll
  • 2/3 cup baby arugula
  • 2 teas. balsamic vinegar
  • 1 teas. olive oil
  • cracked black pepper

Whisk the olive oil and vinegar together. Place the prosciutto and arugula in the roll and topwith themixture of oil and balsamic vinegar. Season with cracked black pepper.Recipe makes 1 serving Estimated WW Smart points 5 per serving.

Tuna Melt

  • 14.5oz. can tuna in water, drained
  • ¼ cup carrots, minced
  • ¼ cup celery, minced
  • 1 Tbsp. onion, minced2slices tomato
  • 1 Tbsp. light mayonnaise
  • 1 teas. red wine vinegar
  • 2 slices whole wheat bread
  • 2 slices reduced fat cheddar cheese
  • salt and pepper to taste

In a small bowl combine the tuna, celery, onion, carrots, mayonnaise, vinegar and salt andpepper. Mixwell. Spray a large skillet with cooking spray and place the skillet over low heat.Place the bread in the skillet and toast the bread on one side. Turn the bread over and top thetoasted side of the bread with the cheese. tuna salad and tomato. Cook the sandwich on lowheat until the cheese melts and the bread is toasted. Chicken Club Lettuce Wrap

  • 1 head iceberg lettuce
  • 1 Tbsp. light mayonnaise
  • 3 oz. chicken or turkey breast
  • 2 strips cooked bacon
  • 2 thin slices tomato

Wash and core the lettuce and remove the outer leaves. Cut the bacon strips in half. Place theparchment paper or plastic wrap on your work surface.Layer 6 or 7 large lettuce leaves in themiddle of the paper or wrap. Spread the mayonnaise in the center of the lettuce. Next layerthe chicken or turkey, bacon and tomato on the lettuce. Use the parchment paper or plasticwrap to roll up the lettucewraps jelly roll style. Wrap the lettuce wraps as tightly as possible.When the lettuce is completely wrapped roll the parchment paper or plastic wrap tightlyaround the lettuce. Use a serrated knife to cut the lettuce wrap in half.
