Rosemary Roast Turkey Breast

  • 5 lb. turkey breast with ribs
  • ¼ cup chopped green onions
  • ½ cup chopped fresh parsley
  • 2 Tbsp. fresh rosemary leaves

Marinade:

  • ¼ cup chopped green onion
  • 1 Tbsp. fresh rosemary
  • 1 teas. orange zest
  • 1 cup orange juice
  • 1 cup fat-free chicken broth
  • salt and pepper to taste

Place the marinade ingredients n a small bowl and mix well. Loosen the skin from the turkey, but do not remove the skin. Place the turkey in a large sealable bag and pour in the marinade. Marinate the turkey in the refrigerator for 6–12 hours. Preheat oven to 352 degrees F. Drain the turkey and discard the marinade. Mix the parsley, onions and rosemary together and stuff this mixture under the turkey skin. Place the turkey on a wire rack in a roasting pan. Insert a meat thermometer into the thickest part of the turkey breast (do not touch the bone). Place turkey in preheated oven and bake about 2 hours until the turkey reaches an internal temperature of 170 degrees. Remove turkey from oven, tent it loosely with foil, and allow it to rest for about 15 minutes. Remove and discard the skin. Slice the turkey and refrigerate any leftover slices. Buffalo Turkey Breast

  • 1 ½ lb. boneless skinless turkey breast
  • ¼ cup buffalo sauce
  • ¼ teas. garlic powder
  • 1 Tbsp. olive oil
  • olive oil spray
  • ¼ cup water
  • salt and pepper to taste
  • Preheat oven to 350 degrees F. Spray a baking pan with olive oil spray. Combine the garlic powder and salt and pepper in a small bowl. Pierce the turkey breast with a fork on each side. Pierce the turkey breast about 10-12 times on each side. Drizzle the oil over the turkey breast and rub to coat the turkey breast evenly on both sides. Sprinkle the garlic powder mixture over the turkey breast and rub it evenly into both sides. Place the smooth side of the turkey breast down and drizzle one-half of the buffalo sauce over the turkey breast rubbing the sauce over the turkey breast to coat it. Place the turkey breast in the baking pan with the smooth side up.
  • Spread the remaining buffalo sauce over the smooth side of the turkey breast. Pour the water into  the pan being careful not to pour water over the turkey. Place a meat thermometer into the thickest part of the turkey breast. Place the roasting pan the preheated oven and roast the turkey breast for 35-40 minutes until the juices run clear and the thermometer reads 160 degrees. Remove turkey breast from the oven, tent is loosely with foil and allow the turkey breast to rest for about 10 minutes before slicing. Recipe makes 8 servings Estimated WW Smart points 1 per serving.
