Salmon with Bourbon Glaze, Baked Coconut Shrimp

Salmon with Bourbon Glaze

  • 2 lb. salmon fillets
  • 3 Tbsp. bourbon
  • 6 Tsp. brown sugar (not packed)
  • 2 tbsp. soy sauce
  • 1 tbsp. ground ginger
  • 1 Tbsp, lime juice
  • 3 cloves garlic, minced
  • 1 teas. fresh chives
  • salt and pepper to taste

Combine the salmon fillets, bourbon, brown sugar, soy sauce, ginger, garlic and salt and pepper in a zip lock plastic storage bag and refrigerate for about 1 ½ hours. Spray a large skillet with cooking spray and heat over medium-high heat. Add the fish and the marinate to the skillet and cook the fish for about 4 minutes on each side, or until fish reaches desired doneness. Place the fish on serving plates, drizzle with the sauce and sprinkle the fish fillets with the fresh chives.

Baked Coconut Shrimp

  • 24 large uncooked shrimp
  • 1 ½ cups sweetened flaked coconut
  • 1/3 cup cornstarch
  • 3 large egg whites
  • ½ teas. ground red pepper (adjust to your taste)
  • 1 teas. salt

Peel and devein the shrimp. Leave the tails on the shrimp intact. Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil and spray generously with cooking spray. Rinse the shrimp under cold water and pat dry with paper towels. Combine the cornstarch, salt and red pepper in a small bowl and stir to combine. Place the egg whites in a larger bowl and use an electric mixer on high speed to beat the egg whites until they are frothy, about 2 minutes. Place the coconut in a small bowl. Take one shrimp and dredge it in the cornstarch mixture. Next dip this shrimp into the egg whites and finally coat the shrimp in the coconut. Place coated coconut shrimp on prepared baking sheet. Repeat process with each of the remaining shrimp. Spray shrimp on baking sheet with cooking spray. Place baking sheet in preheated oven and bake shrimp for 10 minutes. Turn shrimp over and bake for another 10 minutes or until shrimp are done.
