Salsa Recipes 

Salsa

 

3 cups fresh tomatoes, chopped½ cup green pepper, chopped 

1 cup onion, diced¼ cup fresh cilantro, minced 

2 Tbsp lime juicesalt & pepper to taste 

Place all the ingredients in a bowl and stir until well mixed.  Cover and chill before serving. 

Pineapple Salsa 

2 teas olive oil½ cup onion, chopped 

1 clove garlic, minced½ red pepper, finely chopped 

1 jalapeno pepper, seeded, finely chopped1 teas ginger 

2 Tbsp cider vinegar4 teas light brown sugar 

4 teas water¼ teas salt 

1 ½ cups fresh pineapple, diced1 Tbsp cilantro, chopped 

In a saucepan over medium heat, heat the oil and add the onion and garlic.  Sauté these until softened, about 3 minutes.   Add the red pepper, ginger and jalapeno pepper and cook for an additional 1 minute.  Add the vinegar, water, brown sugar and salt and bring the mixture to a boil.  Lower the heat and simmer for about 5 minutes.  Remove saucepan from stove and stir in the pineapple and cilantro.  Transfer to bowl.  Cool before serving. 

Raspberry Salsa 

2 ½ cups fresh raspberries¼ cup sweet onion, chopped 

1 jalapeno pepper, seeded and finely chopped¼ cup fresh cilantro, chopped 

1 clove garlic, minced¾ teas sugar 

3 Tbsp lime juice 

Place all the ingredients in bowl and stir until well mixed.  Cover and chill before serving. 

Zesty Salsa 

5 ripe tomatoes, diced4 green onions with tops, finely chopped 

4 fresh jalapeno peppers, seeded & diced1 stalk celery, diced 

1 Tbsp fresh cilantro, chopped1 clove garlic, minced 

1 ¼ teas lime juicesalt & pepper to taste 

Combine all ingredients in a bowl and mix well.  Cover and chill before serving 

Avocado Salsa 

2 large avocados, diced½ medium red onion, chopped 

1 Tbsp fresh cilantro, chopped6 grape tomatoes, chopped 

1 Tbsp lime juice1 teas red pepper flakes 

½ cup fresh pineapple, diced¼ teas garlic, minced 

salt & pepper to taste 

Place all ingredients in medium bowl and mix well. Cover and chill before serving 

Corn Salsa 

1 15.25 oz can yellow sweet corn, drained1 red bell pepper, chopped 

1 jalapeno pepper, seeded and diced1 small red onion, chopped 

1 Tbsp lime juice½ teas red pepper flakes 

1 Tbsp. fresh cilantro chopped1 teas honey 

Salt & pepper to taste 

Combine all ingredients in medium bowl and mix well.  Chill before serving. 

Pineapple and Watermelon Salsa 

1 cup crushed pineapple, drained well2 ½ cups watermelon, seeded and chopped 

1 cup sweet onion, minced¼ cup fresh cilantro, chopped 

¼ cup orange juice¼ teas Tabasco, or other hot sauce, optional 

Combine all ingredients in medium bowl and mix well.  Cover and chill before serving.
