Scrambled Eggs with Onion and Tomato

  • 4 eggs
  • 1 cup chopped onion
  • 2 small tomatoes, chopped

In a bowl whisk the eggs. Add the chopped onion and tomato to the eggs. Spray a skillet with cooking spray and heat over medium-high heat. Add the egg mixture to the pan and scramble the eggs until they are done to your liking. Recipe makes 2 servings Estimated WW Smart points 0.

Mini Bacon, Cheese and Vegetable Omelets

  • 1 ½ cups egg substitute
  • ½ cup diced green pepper
  • ½ cup diced onion
  • ½ cup diced tomato
  • 4 slices turkey bacon cut into small pieces
  • 1 teas. hot sauce, optional
  • salt and pepper to taste
  • 2 oz. low fat shredded cheddar cheese

Preheat oven to 350 degrees F. Spray 9 muffin tins thoroughly with cooking spray. Combine the egg substitute, green pepper, onion, tomato, turkey bacon, hot sauce and salt and pepper and mix well. Divide this mixture between the 9 muffin tins. Place muffin tins in preheated oven and bake for 35 minutes. Top each muffin tin with cheese and bake for an additional 10 minutes. Let omelets rest in muffin tins for 5 minutes before serving. Recipe makes 9 servings Estimated WW Smart points 3 per serving.

Mini Cheese and Veggie Frittatas

  • 1 ¾ cups egg substitute
  • 2 plum tomatoes, chopped
  • 1/30 red bell pepper, chopped
  • ½ jalapeno pepper, chopped
  • 1/3 medium onion, chopped
  • ¼ cup chopped mushrooms
  • 1 cup frozen spinach, thawed and squeezed dry
  • ½ cup 2% milk
  • 1 teas. grated parmesan cheese
  • ½ cup 4 cheese Mexican style shredded cheese
  • 1 teas. olive oil
  • Salt and pepper to taste

Preheat oven to 350 degrees F. Spray 9 muffin tins thoroughly with cooking spray. Combine the egg substitute, milk, salt and pepper and set aside. Place a small skillet over medium-high heat and add the olive oil. When the oil is hot add the peppers, onion, mushrooms, spinach and tomato and cook the vegetables until tender. Spoon the cooked vegetables evenly among the muffin tins. Sprinkle with the parmesan cheese and top with the Mexican cheese. Ladle the egg mixture over the vegetables and cheeses in the muffin tins. Use a knife to poke into each muffin tin to be sure egg liquid has seeped all the way down the cup and through the other ingredients. Place muffin tins in preheated oven and bake for about 24 minutes or until frittatas are done and golden on top. If a toothpick comes out of the frittatas clean, they are done. Egg in a Hole

  • 1 egg
  • 1 slice of whole grain bread
  • salt and pepper to taste
  • 1 pat of butter

Melt butter in a small skillet over medium heat. Cut or tear a hold in the bread and add the bread to the pan. (If desired, you can add the piece of bread from making the hole to the pan and fry it also) Crack an egg into the hole in the bread , sprinkle with salt and pepper, and fry for about 1 ½ minutes, turn the bread and egg over and fry the other side for another 1 ½ minutes or to desired doneness.
