Several Recipes for Potatoes 

Many people enjoy some potato salad with a meal or for a barbeque or picnic.  Here is a recipe for German potato salad and also a recipe for country potato salad. 

German Potato Salad 

  • 3 lbs. potatoes
  • 1 lb. bacon, diced 
  • 1 large green pepper, diced
  • 1 large onion, diced 
  • 1 heaping Tbsp flour
  • 1 ½ cups vinegar 
  • 1 cup water
  • 2 heaping Tbsp sugar 
  • Salt and pepper to taste 

Put potatoes in a saucepan and cover with water.  Boil potatoes until fork tender, about 20-25 minutes, do not overcook.   

In large frying pan fry bacon until lightly brown.  Remove bacon, drain on paper towels and dice the bacon.   

Add the onion, parsley and green pepper to diced potatoes Then add the cooked bacon to this mixture.  Add the four to the remaining drippings in the frying pan where you cooked the bacon and then slowly add the vinegar and water and stir until the mixture has thickened slightly.  Add the sugar and salt and pepper.  Mix this combination and pour over the potatoes.  Stir to coat the potatoes.  You want to make this potato salad shortly before serving time since you do not want to refrigerate it before serving. 

Country Potato Salad 

  • 6 potatoes
  • 1 ½ cups celery, diced 
  • ¾ cups mayonnaise
  • 3 Tbsp vinegar 
  • 2 hard boiled eggs, chopped
  • 1 Tbsp, prepared yellow mustard 
  • Salt & pepper to taste
  • 2 tsp chopped parsley 

Put potatoes in their skins into a saucepan and cover the potatoes with water.  Boil until fork tender, 25-30 minutes.  Peel and dice the potatoes and allow them to cool.  After the potatoes have cooled add the other ingredients and stir well.  Refrigerate until serving. 

Crockpot Potato Soup Without Meat 

  • 6 potatoes
  • 1 carrot 
  • 4 chicken bouillon cubes
  • salt & pepper & shopped parsley to taste 
  • 2 onions
  • 1 stalk celery 
  • 1 can evaporated milk
  • 1 cup butter 
  • 5 cups water 

Cut the potatoes into squares.  Dice the carrot, celery and onions.  Place all ingredients into slow cooker and cook on low for 5 or 6 hours. 

Potato, Ham and Cheese Casserole 

  • 2 lb. frozen hash browns
  • 1 stick butter or margarine, melted 
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup 
  • 1 ½ teas dried onion flakes
  • salt & pepper to taste 
  • 2 cups crushed corn flakes
  • 1 cup cubed ham 

Defrost hash browns.  Spray a 13 x 9 inch baking dish with cooking spray. Heat oven to 350 degrees.   Place thawed hash browns and ham into prepared baking dish and toss together. In large bowl combine ½ of the melted butter, sour cream, cheese, mushroom soup, onion flakes and salt and pepper.  Mix these ingredients together well and pour over hash brown and ham in baking dish.  In a small bowl combine the crushed corn flakes with the other ½ of the melted butter.  Sprinkle the corn flakes evenly over the hash brown mixture.  Bake for 50-60 minutes 

Tater Tot Casserole 

  • 1 32 oz package Tater Tots
  • ½ lb. ground beef 
  • 1 can cream of chicken soup
  • 8 oz sour cream 
  • 1 cup grated cheddar cheese 

In frying pan cook ground beef and drain off grease.  Heat oven to 400 degrees. Place Tater Tots in greased baking dish and sprinkle the cooked ground beef over the Tater Tots.  Mix the chicken soup, sour cream and grated cheese together and pour over the Tater Tots and ground beef.  Bake in heated oven for 35 to 45 minutes.
