Shrimp Salad

1 lb. cooked shrimp, peeled and deveined

2 stalks celery, chopped

2 Tbsp. light mayonnaise

1 Tbsp. fat free Greek yogurt

Seafood seasoning to taste

salt and pepper to taste

Combine the shrimp, celery, mayonnaise, yogurt, seafood seasoning and salt and pepper.  Salad may be served on a bed of greens, wrapped in a spinach or lettuce leaf to form a wrap or you might slice a cucumber or tomato, sprinkle the slice with salt and heap the shrimp salad on the cucumber or tomato  slice.

Egg Salad

6 hard-boiled eggs

1 ½  teas. celery, finely chopped

1 teas. Dijon mustard

3 Tbsp. mayonnaise 

salt and pepper to taste

Peel and chop the eggs.  Combine the chopped eggs with the celery, mayonnaise, mustard, salt and pepper and refrigerate until ready to serve.  Egg Salad may be served on a bed of greens, used in a wrap or heaped on a slice of cucumber or tomato.

Tuna Salad

1 4 oz. can tuna in water, drained

¼ cup celery, chopped

¼ cup onion, chopped

2 Tbsp. light mayonnaise

1 teas. red wine vinegar

Mix the drained tuna with the celery, onion, pepper, mayonnaise and wine vinegar.  Salad may be served on a bed of greens or wrapped in spinach or lettuce leaves or heaped on slices of cucumber or tomato.

Cheeseburger Salad

1 lb. 93% lean ground beef

½ small red onion, sliced into rings

4 oz. haas avocado, cubed

1 cup cherry tomatoes, halved

¼ cup reduced fat shredded cheddar cheese

4 cups romaine lettuce, chopped

Salt and pepper to taste

Dressing:

¼ cup light mayonnaise

1 teas. mustard

4 teas. catsup

¼ teas. onion powder

¼ teas. garlic powder

For the dressing whisk together the mayonnaise, mustard, catsup, onion powder and garlic powder in a small bowl and set aside.  In another larger bowl combine the ground beef with salt and pepper. Shape the ground beef into 4 patties. Cook the hamburger patties on a grill to medium doneness, about 4-5 minutes per side.  Turn the patties over halfway through cooking. After turning the patties add the onion rings to the grill and cook for the remaining 4-5 minutes, turning the onion rings over halfway through this time.    Allow the patties to rest for 5-10 minutes and then cut the patties into bite size pieces. Place the lettuce, avocado and tomatoes in a bowl and toss. Top the lettuce mixture with the grilled onions, hamburger pieces and cheese and drizzle the dressing over the salad.
